Grilling makes so much sense during the summer. You aren’t heating up your home by turning on an oven, and for some reason, grilled food just feels more fun. If I’m grilling a main dish, I always grill the sides too, like this Grilled Garlic Parmesan Potatoes recipe.
It just makes so much sense.
If you’re already grilling your protein, why would you turn your oven on for the sides? You’d heat up your whole house, but you also have two cooking areas to pay attention to. So you’re splitting your time between the grill and the oven, which aren’t in the same space.
That’s not ideal. It’s so much easier to make everything in the same cooking space.

Grilled Garlic Parmesan Potatoes Recipe

Grilled Garlic Parmesan Potatoes Ingredients:
- 4 Russet potatoes
- 3 tablespoons olive oil
- 2 teaspoons, plus one pinch, salt
- 1 teaspoon garlic powder
- 1/4 cup Parmesan cheese
How To Make Grilled Garlic Parmesan Potatoes:
Pre-heat a propane grill to 400 F.
Wash the potatoes.
Cube them.
The easiest way to do this is to cut them in half, then cut the halves in half, so now you have four pieces. Cut those pieces in half on an angle, like you’re making steak fries, and you have eight pieces. Finally, cut those into about six pieces each.
Fill a bowl with water and add about a tablespoon of sugar. Put the potato pieces in the water and let them soak for at least thirty minutes. This will pull out some of the starch in the potatoes and help the potatoes crisp up while cooking.
Drain the potatoes and pat them dry.
Put them in an 8- x 11-inch baking pan.
Drizzle the olive oil on top of the pan.
Sprinkle with the salt (reserve the extra pinch), garlic powder, and parmesan cheese.
Stir the potatoes to distribute the olive oil and seasoning.
Cover the entire baking pan with foil.
Put the baking pan directly on the propane grill’s grates. Grill for 30 to 40 minutes. Grilling time will depend on how large you chopped the potatoes.
Remove the pan from the grill and sprinkle the remaining pinch of sea salt on top. Let cool slightly before serving.
Grilled Garlic Parmesan Potatoes: Frequently Asked Questions
I make these Grilled Garlic Parmesan Potatoes on a propane grill because a propane grill is so much easier for me. You just turn it on, wait for it to come up to temperature, and it’s ready to go. When you’re done cooking, you can just turn it off.
You definitely can make these on a charcoal grill instead, if that’s all you have. It’s just not as easy to turn that on and off.
Since charcoal grills generally don’t have a temperature gauge on them like a gas grill does, your temperature may vary. So that may change your cook time as well.
Russet or Idaho potatoes are really budget friendly, so, from that standpoint, they’re best for this.
Fingerling or red potatoes would be great for this recipe because it would mean less chopping since they’re smaller. But, you would need a lot of either of those varieties to make a large quantity of these, and that can get expensive.
Soaking potatoes in sugar water is one of my favorite potato hacks. Soaking them has two benefits.
First, it pulls out some of the starch from the potatoes. That helps to prevent them from sticking together when you cook them. And when you’re cooking these in such close proximity in the pan, that’s definitely a help.
Second, the sugar creates a barrier around the outside of the potato that helps to repel some of the oil. Without it, the potato pieces will absorb more oil and will become soggy.
In this recipe, there isn’t that much oil so the potato pieces can’t absorb too much overall, but this is a really great hack for when you’re deep frying potatoes.
The longer you can soak potatoes in sugar water, the better these two hacks will be. This recipe says a minimum of 30 minutes. But, if you can soak them for a couple hours or even overnight, you’ll come up with better fries.
If you have leftover potatoes, store them in an airtight container in the fridge for about three to four days.
Reheat leftover potatoes in a pan in the oven. Set the oven to 400 F and heat them for about 20 minutes until the potatoes are heated through.
Garlic Parmesan Potatoes In The Oven:
If you planned on making these but now it’s raining, or your grill ran out of propane, you can make these in the oven.
Follow the recipe as is, up until putting the pan on the grill. Instead, put the pan in an oven that has been pre-heated to 400 F. Roast the potatoes for between 50 to 60 minutes, until the potatoes are cooked through.
