Frozen tater tots always remind me of Napoleon Dynamite. There’s a scene where Napoleon is in class, eating tater tots out of a pocket in his cargo pants. His classmate asked for one, Napoleon says no, and the classmates kicks Napoleon’s pocket, squishing the tater tots and knocking some of our his pocket and onto the ground.

That’s how most people think of tater tots. Well, maybe not with that scene from Napoleon Dynamite, but about those log-shaped frozen tots in their original form.

Plain tater tots are fine, but they’re a little boring. So, whenever we have some, I use them to make one of these fun tater tot recipes. Now, keep in mind that these are recipes using tater tots, not recipes for homemade tater tots.

A local restaurant in Wilmington, NC makes these insanely delicious totchos (basically, tater tot nachos), but we can’t go to the bar every time we feel like having them. We would be poor. So of course, we had to recreate them.

Tater tots are fried until they’re golden brown, then topped with nacho toppings: nacho cheese, sour cream, crispy bacon, and green onion. You can add a little bit of sliced jalapeno peppers to these for a kick, if you like your nachos will a little spice.

When we have tater tots in the house, Pete turns them into waffles for us for breakfast. It’s an easy waffle maker hack.

You put a single layer of tater tots in the waffle maker, then cook just like a waffle, until you have really crispy tater tots. We love putting a fried egg on top, but you could just serve eggs on the side.

These mini hash brown breakfast casserole are a really fun breakfast idea (although I do make this for an easy dinner too). 

A mini ramekin is filled with a generous amount of hash browns, eggs, mozzarella and cheddar cheese, and a few other ingredients, then baked. The mini breakfast casseroles are done in about 20 minutes, and taste as great as they look.

If you’re making these for a crowd, you can make it in a full size casserole dish instead of in mini ramekins, since that’s an easier way to make multiple portion.

Bruschetta Totchos

Everyone loves bruschetta and everyone love nachos, so this bruschetta totchos combines those two.

An even layer of tater tots are placed on the bottom of a baking dish. They’re baked until golden, then the crispy tots are topped with mozzarella cheese, cherry tomatoes, and basil. Bake until the cheese is melted and serve.

This is one of our go to game day recipes and it’s always a huge hit.
