There’s a restaurant in Wilmington, NC called The Husk that sells totchos — which are basically nachos with tater tots instead of nacho chips. They’re so good. The last time we were there and a friend ordered them, Pete said we needed to recreate them at home. So off I went to buy all the ingredients for our fully loaded totchos.

We invited my parents over for “Snacks & Stranger Things Sunday” because one, I like themes and two, Stranger Things 3 just came out and we needed to binge it. We decided this was the perfect day to indulge make totchos.

And yes, these are indulgent. They’re not healthy, and everything is from a package or can (except for the green onion I cut from our garden). This isn’t something you should eat on a regular basis, but man do they make a good treat.

Fully Loaded Totchos

What You’ll Need:

  • 1 package frozen tater tots
  • 1 package low-sodium bacon
  • 7oz salsa
  • 8oz. nacho cheese sauce
  • 4oz. sour cream (or Greek yogurt)
  • 2 sprigs green onion, chopped
  • Pinch of salt
  • 4 jalapeno peppers (optional)

What You’ll Do:

Heat up the tater tots according to the package.

While the tater tots are cooking, chop the bacon into small pieces, then cook it through.

Heat up the nacho cheese sauce.

Line the bottom of a bowl with the cooked tater tots. Sprinkle with a pinch of salt. Layer the salsa, nacho cheese, sour cream, and bacon on top. Finish with the green onions.

Serve warm.

Side note: Pete and I topped ours with chopped jalapeno peppers because we like the kick. But my mom doesn’t really like anything spicy, so we left them off of the main batch.
