A few years ago, my friend gave me this slow cooker ginger marmalade chicken recipe. I made it once or twice, and it was delicious, but then it fell out of our rotation.
Recently, we were in Magnolia Plantation and Gardens in Charleston, SC. I noticed a bottle of Honeybell Marmalade in the gift shop. It instantly reminded me of this recipe, so I picked up a jar.
If you don’t have the chance to get to Charleston, you can pick up any orange marmalade at your local grocery store and substitute that in.
But if you do get to Charleston, definitely head over to Magnolia Plantation and Gardens. And I don’t even mean for the gift shop. We had such an amazing afternoon at the gardens. They were beautiful and the perfect place to spend half the day.
It might inspire you to plant a garden, or maybe to make this ginger marmalade chicken.
Ginger Marmalade Slow Cooker Chicken Recipe
This recipe is pretty sweet, so keep that in mind when you’re making it. If you don’t want it too sweet, you can add a little less of the marmalade. If you do that, be sure to compensate with water, so you’re still at 8 oz. of liquid.
Ginger Marmalade Slow Cooker Chicken Ingredients:
- 5 frozen chicken breast tenderloins
- 8 oz. honeybell or orange marmalade
- 2 inches ginger
- Pinch of salt
- Pinch of white pepper
- 1 tablespoon flour
How To Make Ginger Marmalade Slow Cooker Chicken:
Peel the ginger and chop it into small pieces.
Put the chicken, marmalade, ginger, salt, and pepper in the slow cooker.
Cook on high for 3.5 hours.
Open the slow cooker and flip the chicken.
Cook on high for another 30 minutes.
When the chicken is done, remove about 1/4 cup of the remaining liquid. Add the flour to the liquid to make a slurry.
Stir until the flour is completely dissolved.
Stir the slurry into the liquid in the slow cooker to thicken the liquid.
Shred it using two forks or meat claws and stir.
Serve over rice.
Can you use any other pieces of chicken?
Personally, I use chicken breast in this recipe because I like the shredded chicken over rice. It’s a lot easier to shred chicken breast instead of something like a leg.
If you don’t want to shred the chicken before serving it, you can use any pieces of chicken in this.
Just keep in mind that if you use a different piece of chicken, your cooking time may vary.
Can you use fresh chicken?
I almost always use frozen chicken in the slow cooker because fresh chicken cooks a lot quicker and I worry about it cooking too quick and drying out.
But, if all you have is fresh chicken, that’s fine.
I would first suggest adding an onion to this recipe. Slice it and put it on the bottom of the slow cooker, then put the chicken on top of it. That will create a barrier between the chicken and the slow cooker, so the chicken cooks slower.
If you do that, you should be fine cooking it on high for four hours, like the recipe calls for.
This is just a guestimate of time, though because I actually haven’t ever made this with fresh chicken, so be sure to check the chicken after the three hour mark and see how it’s doing.
Is this gluten-free?
Since you use flour in the slurry, this isn’t a gluten-free recipe. There’s gluten in all purpose flour.
If you need to make this a gluten-free recipe, you can use cornstarch in place of flour to make a slurry. Cornstarch has double the thickening power of flour, so you’ll want to use a half tablespoon, rather than a full tablespoon, if you use cornstarch instead of flour.
I know a lot of people who don’t like the taste of cornstarch, so that’s why I always make slurries with flour. But either will work.
Can you skip the slurry?
If you’re making anything with an extra bit of liquid, I suggest making a slurry.
A slurry is a really simple way to thicken liquids. I make them a lot to thicken soups and other slow cooker recipes.
If you skip it, that’s fine. But you’ll end up with a really running sauce that will sort of drizzle over your rice but won’t add much to it.
How can you store leftover Slow Cooker Ginger Marmalade Chicken?
If you have leftovers, it’s easy to store. Just put the leftovers in an air tight container and keep them in the fridge for three to four days.
Put any leftover rice and the chicken mixture in the same container. It’s easier to make up leftover bowls that way.
How can you reheat leftovers?
The easiest way to reheat any leftovers is to microwave them.
Spoon the leftovers into a bowl, spritz a little water on top (if you are reheating rice) and microwave on high for about 90 seconds.
You can reheat this over the stovetop, but it will take a lot longer and honestly, it won’t make it taste any better.
What can use serve with Slow Cooker Ginger Marmalade Chicken?
If you serve this ginger marmalade chicken over rice, like we do, you have your protein and starch covered. That means, you’re just looking for a vegetable to serve on the side.
Since this is sweet, we tend to go with a richer vegetable to offset the sweetness.
