A few years ago, I set a goal to eat a piece of fruit every day. It sounds simple. Everybody eats fruit. All the time. Right?
Well, no.
I realized that even though I really like fruit, I wasn’t actually eating it as often as I thought or as I probably should. So I set the goal, have been really intentional about it, and have been eating fruit.
And now, when we’re having parties or celebrating a holiday, I make sure to make some type of recipe with fruit just to make sure I’m eating my daily fruit.
So, for the Fourth of July, that meant firework fruit skewers.
Fine. It’s fruit on a stick. A really cute stick with shiny streamers on one end so it looks like a sparkler. And a star-shaped watermelon slice at the end.
So sure. Fruit on a stick. But it’s cute and extra and perfect for your July 4th party.

Red, White, And Blue Fruit Sparklers Ingredients:

- Strawberries — These are going to be the main red component of the skewers. If you wanted, you could substitute raspberries.
- Mini marshmallows — This is your white component. If you don’t want to make these sweet,, you could use mozzarella pearls instead.
- Blueberries — This is the blue component of the skewers, so now you have red, white, and blue, making these patriotic skewers. You could use blackberries, but those are pretty dark compared to blueberries.
- Watermelon — This is going to go at the bottom of the skewers. You could use a piece of pineapple instead, which would give you a yellow star. However, I’m allergic to pineapple, so I don’t do that.
How To Make Red, White, And Blue Fruit Sparklers:
Quick note before we start: I use 6-inch foil picks for my skewers. They come with the foil attached. If you use a different sized skewer, you may need to add a little less fruit.
If you can’t find the skewers, you can still make these with plain skewers. They’d still be really cute because of the red, white, and blue fruit and the star.

Start by cutting the leaves off of the strawberries.
Then, cut the tip off of the strawberry. You can just go ahead and eat that. You don’t need it for your skewers.

Cut what remains of the strawberry in half. Take one of those two pieces and thread it longways onto the skewer.
If you try to thread it through the center, there will be a hole and it will flop around.
Move it up as high as possible.
Quick note: If you wanted more strawberry, you could just cut the end with the leaves off and the rest of the full strawberry on this.
We don’t do that because the strawberry slice is a very similar thickness to the marshmallows and blueberries, making this look really uniform. But, like I always say, do whatever works for you.

Thread three mini marshmallows onto the skewer.
Move them up to touch the strawberry slice.

Then, thread three blueberries onto the skewer.
Quick note: I make sure to stick the point of the skewer through the calyx in the center of the blueberry because I feel like that holds better than trying to jam it through the side.
(Also, yes, I just learned that word for this post. I didn’t know it before today.)
Carefully move the blueberries up to touch the marshmallows.
Quick note: The harder blueberries work better in this. Overripe blueberries that are a little soft can make a mess.

Slice the watermelon into half inch slices.
Use a small star-shaped cookie cutter to cut stars out of the watermelon.
If you have a star-shaped cookie cutter set, the smallest star works best. If you don’t have one, you could easily cut a star out of the watermelon using a sharp knife since it’s all straight lines. Or, use a melon baller to make circles out of the watermelon. Or just cut cubes.
The stars are going to be the cutest shape (which is why I do them), but if you’re making these for the first time, no one will know that I do stars, so you can do whatever is easiest for you.
Add the watermelon star to the bottom of the skewer.

Keep going until you’ve made as many as you want or until you’re out of fruit.

Store the leftover fruit kabobs in an airtight bag in the fridge. They’ll last about a week that way.
Just keep in mind that the mini marshmallows will get mushy. They don’t get sticky when the fruit is together in a bag, but they will just get a little soft, so keep that in mind when you’re eating them.
But, because of the mushy marshmallows, it’s easier to just store the skewers as is rather than trying to remove them from the sticks to store them in an airtight container.
