Quick note: Almost all of these recipes are made on a sheet pan. We have a jumbo sized one so we can cook everything at once and it makes my life so much easier.
I also have a silicone baking mat that fits on the baking pan. The vegetables slide off so easily and you don’t have to worry about any burning and getting stuck to the pan. Then, when I’m done, I just wash that and move on with my life.
