I will eat soup at any time during any weather. It can be a scorcher outside, and I’ll still want soup. Pete likes soup too, but he likes a hearty soup, like this One Pot Lasagna Soup recipe.

Lasagna Soup is is packed with sausage, vegetables, and pasta.

And clean up is so easy because all you have to clean is one pot and one cooking utensil. It doesn’t get easier than that.

We made this in our Dutch oven, which is why we’re calling it a Dutch oven soup recipe. But you can make it in any stock pot (we have more about that below).

Pete said it really reminded him of a Hamburger Helper, because it was more like a stoup than a soup. But he did say it tasted a lot better than a box of Hamburger Helper, thank goodness.

Cook the sausage in a Dutch oven until it is cooked through. If there’s excess oil, drain it, then add the sausage back to the pan.

Add in the chopped onion and cook until it is translucent, about ten minutes.

Stir in the chopped garlic, parsley, and garlic salt.

Add the tomato paste.

Pour in the diced tomatoes and chicken stock. Bring the soup to a boil. Reduce the heat and simmer for 25 minutes.

Add in the pasta and cook for another 10 minutes.

Remove the Dutch oven from the heat and stir in the heavy cream.

Shred the mozzarella cheese and add it to the soup.

Stir in the Parmesan cheese until everything is combined.

Serve with a dollop of ricotta cheese on top.

Do you have to use a Dutch oven?

I got a Dutch oven for my birthday last year, and I’m obsessed with it. It heats really well — and evenly. I don’t get that same kind of consistency with a large stock pot. A Dutch oven also holds a temperature well when you’re heating something low and slow.

For years, though, I used a stock pot to make soups, like our Simple Homemade Tomato Soup. And the soups always turned out delicious in the stock pot. So, if that’s what you have, that’s what you have.

Sometimes, when I would heat things to a boil and then simmer them in a stock pot, I would get a lot of popping and bubbling. I don’t feel like this happens in the same scary, dangerous way in the Dutch oven. So, if you’re making this in a stock pot, just be careful and keep your eye on the Lasagna Soup.

What type of sausage is best for Lasagna Soup?

Your life will be so much easier if you use ground sausage for this Lasagna Soup recipe.

If you buy sausage in casing and then try to peel off the casing and break up the sausage, it’s just a little bit of a pain in the neck. It’s not the end of the world, but it’s just extra unnecessary effort.

And you need to break down the sausage into crumbles for Lasagna Soup. You don’t want chunks of sausage. And some sausage in the casing is made in a way that you can’t actually break it into crumbles. So ground sausage is best.

After that, whatever type of sausage you use is up to you.

Generally, when I’m making something with sausage links, like our Sheet Pan Chicken Vesuvio, I choose hot Italian sausage. But, when I’m making something like this Dutch oven Lasagna Soup with a ton of ingredients, I just go with a plain pork sausage.

What kind of pasta should I use in Lasagna Soup?

I love using bow tie pasta in Lasagna Soup because it’s fun shape, easy to eat, and is the same consistency of lasagna noodles.

If you wanted, you could use lasagna noodles in this soup. If you do use lasagna noodles, be sure to break them into bite-sized pieces before adding them to the soup.

When you do that, you’ll see how similar they look to bow tie pasta and you’ll understand why I used it.

If you can find it, mafalda pasta noodles look like tiny lasagna noodles, so those would look great in the soup and you wouldn’t have to break them into bite-sized pieces.

Can I use shredded cheese in this soup?

Shredded cheese, which you can buy in a bag, has preservatives in it that assure the cheese shreds don’t clump together in the bag. That’s great … except not when you’re making recipes that need cheese to melt, like this one.

Blocks of cheese don’t have those preservatives, so if you shred a block of cheese instead of using bagged shredded cheese, the cheese will melt better in the soup.

Can Lasagna Soup be frozen?

If you make too much soup, you can definitely freeze Lasagna Soup. Just wait until the soup has cooled completely, then put it in freezer-safe containers and you can freeze it for up to three months.

If your intention is to make this soup to freeze it, I recommend following the recipe as written, but omitting the pasta. Pasta doesn’t freeze well and will be incredibly mushy when it’s reheated.

Instead, when you’re ready for the frozen Lasagna Soup, defrost it in the refrigerator overnight. Heat it over the stove, then boil the pasta according to the package. Stir the cooked pasta into the Lasagna Soup when you’re ready to serve it.

How can you store leftovers?

If you have leftover Lasagna Soup, and you’re not planning to freeze it, you can refrigerate it in air-tight containers for about three days.

How do you reheat Lasagna Soup?

To reheat refrigerated Lasagna Soup, just pour it into a pan and reheat it on the stove. If the soup has thickened, you may want to add 1/4- to 1/2 cup of water to the soup to thin it out.

You can heat the soup up in the microwave in individual portions as well.

Is Lasagna Soup keto-friendly?

The pasta in this Lasagna Soup isn’t keto-friendly because there are carbs in pasta. But tomatoes, sausage, and chicken broth are all keto-friendly. Onions aren’t necessarily keto-friendly, but when they’re in recipes with keto-friendly ingredients, onions are okay.

So, if you omit the pasta, or use a carb free pasta, this is a keto-friendly Lasagna Soup.

What do you eat with Lasagna Soup?

Lasagna Soup is a full meal all on its own. But I would suggest that you serve it with either a good, crunchy bread or a side salad.

Ingredients

  • 1 pound ground sausage
  • 1 medium onion, chopped
  • 6 cloves of garlic, chopped
  • 1 tablespoon parsley
  • 1 tablespoon garlic salt
  • 6 oz. tomato paste
  • 2 (15 to 16 oz. ) cans diced tomatoes
  • 6 cups chicken broth
  • 8 oz. bow tie pasta
  • 1/2 c. heavy cream
  • 4 oz. mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese
  • Dollop of ricotta cheese (for garnish)
