No one says a good meal requires you to slave over it. No. That’s why this easy Sheet Pan Chicken Vesuvio recipe is so perfect. It’s basically a “set it and forget it” recipe.

The really nice part about this meal is that it’s a one-pot meal too. Afterwards, all you need to clean is one sheet pan.

Now if you’ve never heard of Chicken Vesuvio, here’s a little background. Chicken Vesuvio is an Italian-American chicken-on-the-bone dish with a white wine sauce. It’s traditionally made with potatoes and peas.

Don’t worry about the wine in it. It cooks out so you can serve this to anyone underage no problem.

We add a little bit more than just potatoes and peas to our Chicken Vesuvio. We add carrots for color and sausage because it’s delicious. Plus onions because onions are a great way to sneak a little extra vegetable into every dish.

Easy Sheet Pan Chicken Vesuvio Ingredients:

  • 3 yellow potatoes
  • 1 pack sausage links
  • 2 onions
  • 1 head garlic
  • 1 pound carrots
  • 1 whole chicken (about one pound)
  • 15oz. can peas
  • 3/4 cup white wine
  • 1.5 cups chicken broth
  • 1 tablespoon rosemary
  • 1 tablespoon dried parsley
  • 1/3 cup olive oil

Pre-heat the oven to 375.

Remove the skin from the onions, but don’t worry about peeling anything else.

Rough chop the onions, sausage, carrots, potatoes, and garlic. Put them all in a large sheet pan.

Keep in mind that the larger you cut these pieces, the longer it will take them to cook. So if you want soft carrots and potatoes, cut them smaller than we have in our photos (we like them with a little bit of bite to them).

Drain the peas and add them to the pan.

Cut the whole chicken into pieces and add it on top of the other ingredients.

Pour the white wine and chicken broth on top of the ingredients.

Bake for about an hour and 20 minutes, until your chicken is at 165 degrees. (We use a digital meat thermometer to check this). When the chicken is cooked through and browned on top, it’s ready.

If you have leftovers and store them in the fridge, the white wine sauce will coagulate. When you’re reheating, resist the temptation to add a splash of chicken broth to the bowl. The sauce will thin when it’s warm. You can add a pat of butter to give it a richer flavor when you microwave it, if you want.

What is Chicken Vesuvio?

Chicken Vesuvio is an Italian-American dish, made famous in Chicago, that consists of chicken on the bone, potatoes, garlic, olive oil, and white wine. Peas are the traditional vegetable to go with this, although other variations (like ours) add onions and carrots.

It’s named after Mount Vesuvius, a volcano located in Campania, Italy, although no one really knows why.

Can kids eat Sheet Pan Chicken Vesuvio?

I know what you’re thinking. There’s almost a cup of wine in the recipe. So, is the recipe safe for kids or people under 21?

Yes.

Mostly.

So there’s the old adage that alcohol cooks out while you’re cooking, so it’s safe for kids and people under 21 to eat food that has alcohol as an ingredient.

And that’s mostly true. But it has a lot of factors involved, like how much alcohol is used, how long the food is cooked for, how it is cooked, and what type of alcohol is used.

Baking or steaming is the best method to cook the wine so the majority of the alcohol will cook out and evaporate.

Cooking in a pan without a top is best practices because that gives the alcohol somewhere to go, as opposed to when a lid or foil is on, trapping the alcohol.

And cooking for over an hour is the best recommendation.

So since this recipe bakes for over an hour, it is considered safe for kids and people under 21 by those standards.

What can I substitute for cooking wine?

If you’re still a little hesitant, or if you’re making this for someone who is pregnant and you want to be 100% careful, you have a couple options.

You can use kotterin, which is a Japanese seasoning liquid that’s similar to mirin (Japanese rice wine vinegar). Mirin does contain a bit of alcohol in it, and kotterin, with less than 1% alcohol, is considered a suitable substitution.

Keep in mind that that alcohol amount is negligible. Even balsamic vinegar has slight and comparable traces of alcohol, as does white wine vinegar, due to its cooking process.

You can also use chicken broth in place of the white wine vinegar, which is easier to find. And since you’re already using chicken broth in this recipe, just add 3/4 of a cup more.

Can I use chicken pieces instead of a whole chicken?

I leave the breaking apart of the whole chicken to Pete. It’s not my forte. Personally, I never actually cook a whole chicken. Chicken Vesuvio is known for chicken on the bone, though, so keep that in mind if you’re cooking this for someone who has had Chicken Vesuvio before.

But, if you don’t want to use a whole chicken, you can buy chicken pieces for this recipe instead.

A pack of chicken thighs would work perfectly in this Sheet Pan Chicken Vesuvio because they cook slower and will be able to stay in the pan for the full hour and 20 minutes.

You can use a package of chicken breast, but know that chicken breast cooks a lot faster and dries out quicker than thighs or legs. So you’ll want to cut your carrots and potatoes smaller so they cook quicker and are ready when the chicken breast is.

I wouldn’t recommend chicken breast tenderloins because those will cook very quickly and by the time the rest of the meal is ready, the chicken breast tenderloins will have really dried out.

What can I serve with Sheet Pan Chicken Vesuvio?

The best part about Sheet Pan Chicken Vesuvio is that the entire meal cooks in one pan. There’s the protein (chicken and sausage), starch (potatoes), and vegetables (carrots and peas) to make up a full meal.

If you feel like you need something to serve this with, though, we recommend a long grain and wild rice blend. Make it in a rice cooker while the Chicken Vesuvio is cooking and that’s still pretty easy clean up.

Quinoa or seasoned couscous would be good on the side as well.
