Lucky Charms cereal is the unofficial cereal of St. Patrick’s Day. I mean, its mascot is a leprechaun. How could it not? So of course, when you’re making St. Patrick’s Day treats, you have to incorporate Lucky Charms cereal somehow.
On top of white chocolate to make this Lucky Charms Chocolate Bark is the easiest way to do it. At least, we think so.
Plus, candy bark is one of those fun treats that looks cute and comes together in just minutes. So it’s very little effort for a lot a reward.

Lucky Charms Chocolate Bark Recipe

Lucky Charms Chocolate Bark Ingredients:
- Lucky Charms marshmallows
- 8 oz. (4 squares) vanilla almond bark
- 15 green candy melts
- Rainbow confetti sprinkles
How To Make Lucky Charms Chocolate Bark:
If you’re starting with a box of Lucky Charms cereal, you’ll want to separate the marshmallows from the cereal pieces.
Honestly, it’s a lot easier to buy a bag of Lucky Charms marshmallows because then you don’t have to worry about taking the time to separate them. But, Lucky Charms are on sale all March (and I ended up getting three boxes for free at the grocery store last year, so a box of cereal is more frugal).
Set the marshmallows aside.
Melt the vanilla almond bark according to the package.
The easiest way to do this is to cut it into smaller pieces, then microwave it for one minute. Stir. Then, microwave and stir at 30 second intervals until the vanilla almond bark is completely melted. I find with this much almond bark melting at once, you’ll need an extra minute to fully melt it.
Pour the melted chocolate onto a silicone baking mat-lined baking sheet. Alternatively, you can also use parchment paper.
Use the back of a spoon to spread it into a 8- x 10-inch rectangle.
You want to do your best to make sure it’s an even layer of melted chocolate and that there aren’t really thin parts that you can see through.
Melt the green candy melts in the microwave according to the package.
Just like the vanilla almond bark, microwave it for one minute, then stir. Microwave and stir in 30 second intervals until the candy melts are melted.
Spoon dollops of the green candy melts into the melted white chocolate.
Use a toothpick to spread the green candy melts out, going from side to side. Try to get the melted green chocolate into the corners.
You can go back and forth in the same direction as many times as you want.
When the green is spread out enough, drag the toothpick from top to bottom just once.
If you go back from top to bottom, the colors drag and mix too much and turn really messy. The same happens if you try to mix in a circular motion, so don’t do that.
Haphazardly drop the Lucky Charms marshmallows into the top of the chocolate bark.
I didn’t measure, but if I had to guess, I would say you’re using about a cup of Lucky Charms marshmallows. Of course, you could use more or less. I just wanted to give you a measurement in case it helps.
Sprinkle the remaining blank spaces with the rainbow confetti sprinkles.
Gently push down onto the marshmallows to make sure they’re stuck into the chocolate.
Wait until the chocolate has cooled completely (or at least to room temperature).
Remove the candy bark from the silicone baking mat and move it to a cutting board.
Cut the chocolate bark into small pieces.
Lucky Charms Chocolate Bark: Frequently Asked Questions
A silicone baking mat is so convenient. Melted chocolate will easily pop off it when it has hardened. The whole thing comes off easily at once. It doesn’t do that if you pour it straight onto a baking sheet.
If you don’t have a silicone baking mat, you could use parchment paper too. I just prefer a silicone baking mat because it’s reusable, so it’s more sustainable and more frugal.
I use confetti rainbow sprinkles when I make this Lucky Charms bark recipe because I want to add a little bit of rainbow into the dessert. Plus, the confetti sprinkles are flat and round, so they lay easily and take up a lot of space in the gaps.
If you prefer, there are round, gold sprinkles out there that feel like gold coins. Those would be cute too.
But really, the colors of sprinkles don’t matter that much, so use whatever festive sprinkles you have at home. And, if you don’t have any that really feel St. Patrick’s Day-esque, just grab some leftover green sprinkles from Christmas. No one will know.
Whenever I make chocolate bark (which is a lot), I prefer to use almond bark as the base rather than chocolate chips. Chocolate chips don’t melt as well and burn easily. There’s a higher chance of ruining the chocolate when you microwave chocolate chips.
If you can’t find green candy melts because everyone is buying them this time of year, you can microwave 2 oz. (one square) of vanilla almond bark in a separate bowl. Add a few drops of green gel food coloring to the chocolate. Stir until combined.
Be really aware of the food coloring that you’re adding. It has to be gel food coloring. Traditional, water-based food coloring will cease the chocolate and you won’t be able to use it.
If you’d rather not have white chocolate bark as the base, you can use chocolate almond bark. It might be a little hard to see the green swirls in chocolate almond bark, though, so I would just skip that part.
Store any leftover Lucky Charms Chocolate Bark in an airtight container. You can leave it at room temperature for about three weeks.
If it’s really warm where you are, you can store the chocolate bark in the fridge.
Since chocolate bark last about three weeks, you can definitely make this ahead of time. The marshmallows might start getting a little hard after a couple days, so I wouldn’t recommend making this more than a few days ahead of time.
But, if you’re having a St. Patrick’s Day dinner that’s going to take up your time, you can make a big batch of this chocolate bark the day before to serve as dessert.
