Pete makes me Egg In A Hole (also known a Toad In A Hole) every so often. That’s when you make a hole in bread (he always uses a heart-shaped cookie cutter to make it), drop in an egg, and cook it. I make something similar for brunch, but instead of using bread, I make this Egg In A Hole with mushrooms and spinach recipe.
So. Good.
It’s packed with vegetables, which is a great way to start the day. It’s also keto-friendly because of the lack of bread. So if you’re making breakfast for someone who is following keto, this is a good one.
And it’s just so pretty. The green spinach, the rich brown mushrooms, the yellow and white of the egg. The presentation is beautiful and a really nice idea if you’re making breakfast for company.

Egg In A Hole with mushrooms and spinach recipe

Egg In A Hole with mushrooms and spinach Ingredients:
- 8 oz. mushrooms
- 1 teaspoon olive oil
- 10 oz. bag of spinach
- Pinch of salt
- 4 pats of butter
- 4 eggs
- Everything but the Bagel seasoning
How to make Egg In A Hole with mushrooms and spinach:
Slice the mushrooms.
Heat the olive oil in a skillet and add the mushrooms. Cook until the mushrooms soften and start to caramelize, about 15 minutes.
Add the spinach and a pinch of salt to the pan. Cook until the spinach is wilted, about 5 minutes.
Mix together so the mushrooms and spinach are equally dispersed.
Make four wells in the mushroom and spinach mixture.
Put a pat of butter in each well. Let it melt completely.
Crack one egg into each well.
Sprinkle each egg with a dash of Everything but the Bagel seasoning.
Let the egg cook through, but leave the yolk runny (alternatively, you can leave the eggs until the yolk is cooked through if you don’t like runny yolks).
When the eggs are done, use a spatula to split the skillet into quarters. Serve one quarter (with an egg) per serving.
Egg In A Hole With Mushrooms And Spinach: Frequently Asked Questions
The best size skillet to make Egg In A Hole with mushrooms and spinach is a 12-inch skillet. It fits everything perfectly, including the entire bag of spinach.
If you have a smaller skillet, you may need to cook the spinach in batches. That’s by no means the end of the world, though. So if you only have a smaller skillet, just use that.
If you only have an 8-inch frying pan, I would suggest cooking in batches. Four servings may have a hard time fitting in an 8-inch pan.
Cook all the mushrooms at once, then set half aside. Cook half the spinach with half the mushrooms, then make two wells and cook the eggs.
Plate those two servings, then add the rest of the mushrooms and spinach to the pan, cook those together, add the eggs, and you’re good to go.
There are some recipes where frozen spinach works just fine, like spinach and artichoke dip. But in this recipe, you really want those big pieces of spinach that you get when you cook fresh spinach. Frozen spinach will cook down too small and won’t really work in this.
But, small secret, what I actually prefer to use is frozen fresh spinach.
So, I’ll buy a bag of fresh spinach and then throw in the freezer when I get home from the grocery store. I don’t open it, don’t crush it, don’t move it from the bag to another container. I just toss the entire bag in the freezer as is.
When I need it, I just pull the bag out without defrosting it. Give the bag a little squeeze and it will crush the spinach down just a little, enough that you end up with bite sized pieces of spinach that you don’t have to cut before adding them to your recipe.
You’re not adding any extra time to your cooking because you don’t need to defrost the spinach first. And you don’t have to worry about squeezing out the extra moisture from the spinach like you do when you defrost frozen spinach.
Plus, if you’re worried about your budget, bagged spinach goes on sale often and ends up being cheaper than frozen spinach (at least, in our ALDI). So I’ll buy a couple bags when they’re on sale and keep them in the freezer until I’m ready for them.
If you have any leftovers, you can store them in an airtight container in the fridge for about three days.
To reheat any Egg In A Hole with mushrooms and spinach leftovers, definitely use the oven. Put a little oil down in a pan, add your leftovers, and put a lid on top. Heat over low- to medium-heat until the egg is warmed.
I wouldn’t suggest reheating any Egg In A Hole with mushrooms and spinach leftovers in the microwave because that can cause the egg to pop and make a mess.
Can you add bacon to this?
Listen. I am not opposed to bacon. I really do believe bacon makes everything better. So if you want to add bacon to this, be my guest.
But do you need to add bacon to this? No. It’s perfectly fine as a vegetarian recipe.
But, I’m not here to stop your dreams of bacon. So if you want to add bacon to this Egg In A Hole with mushrooms and spinach, here’s how I would do it.
Cook your bacon first, then set it aside. Don’t drain the pan. Instead of using oil to cook the mushrooms, cook them down in the reserved bacon grease. That will add a lot of flavor to the mushrooms.
Cook the spinach and eggs as written in the recipe. When the eggs are just about ready, crush the bacon and sprinkle it over the entire skillet.
