It’s hard to imagine Valentine’s Day without chocolate and candy. From heart-shaped boxes of chocolates to little colorful conversation hearts (which we used in this Valentine’s Day Graham Cracker Chocolate Bark!), Valentine’s Day treats are everywhere this time of year … not that me and my sweet tooth are complaining.

But of course, you don’t just want to give someone a box of chocolate.

Or maybe that’s just me. I don’t want to.

If you’re like me, you’ll want to incorporate boxed candy, like those aforementioned Conversation Hearts, into this graham cracker chocolate bark. Their texture is a great compliment to the graham cracker.

How To Make Valentine’s Day Graham Cracker Chocolate Bark:

Lay a silicone baking mat on a cookie sheet.

You can use parchment paper instead, but I like a baking mat because it’s reusable.

Lay six graham crackers in two rows on the baking mat.

Melt the chocolate chips in a microwaveable safe container. Pour them over the graham crackers and spread the melted chocolate evenly with either the back of a spoon or an icing spreader.

Add six or so drops of the red icing gel into the melted chocolate. Use a toothpick to drag the icing gel back and forth, making sure to go from side to side.

Add a few more drops of icing gel, then run the toothpick up and down to spread the icing gel.

Stop when you have enough of a pink accent running through the chocolate.

Very carefully, push the conversation hearts into the chocolate.

Sprinkle some of the heart sprinkles into the chocolate.

Use a toothpick to push them down to make sure they get stuck into the chocolate.

Put the entire tray in the fridge for about 20 minutes until the chocolate has cooled completely.

Use a knife to slice the bark into pieces. They don’t have to be even, and they don’t have to be straight. Just cut it into chunks.

Store in an airtight container, on the counter or in the fridge, for up to a week.

If you want to gift this to a friend to Valentine’s Day, you can put a bunch of pieces in a plastic treat bag with a ribbon and a small card. You’ll just want to encourage your friend to eat it quickly or to store any leftovers in the fridge.

Milk Chocolate Variation:

If you’d rather use a milk chocolate than white chocolate, you can do that. Melt 6 oz. of chocolate almond bark instead of white chocolate chips. Pour that over graham crackers. Since you’re using a brown chocolate now instead of white chocolate, you could use chocolate graham crackers to make this.

Omit the red icing gel because it won’t come out at all. Instead, use melted red candy melts to add a little color. Or just skip it. It’s up to you.

Then, add the candies and sprinkles just like in the original recipe.

What kind of graham crackers should I use?

Honey graham crackers work better than cinnamon graham crackers. If you use cinnamon, that cinnamon could get into the white chocolate when you’re spreading it around and it won’t look as pretty.

Can I use candy melts?

Use white chocolate chips or vanilla almond bark instead of candy melts. Candy melts are a lot easier to melt, but since the majority of the sweetness for this chocolate bark comes from the chocolate, you’ll actually want chips for this one.

When I’m making a colored candy bark, where the color really matters, I will use candy melts. But, personally, I don’t like the taste of candy melts. If you like it, go ahead and use those.

This is so contradictory to the tip above, but, if you can’t find gel icing, you can use pink or red candy melts. I know, I know. I just said don’t use candy melts instead of white chocolate chips.

But you’d only use a tiny bit of red candy melts to add some colored swirls to this Valentine’s Day Graham Cracker Chocolate Bark. So the flavoring of the candy melt won’t compete with the flavor of the white chocolate.

How do I get the sprinkles to stick?

After you sprinkle the heart-shaped sprinkles and the conversation hearts, use the back of the toothpick to push down every heart. I know, that sounds ridiculous, but if you don’t, they’ll fall off.

Even though the chocolate is hot, unless you add a little bit of pressure to each sprinkle, the sprinkles won’t stick. So, when you cut this Valentine’s Day chocolate bark, the sprinkles will just fall off leaving you with no decorations.
