Taco Lasagna Recipe

I love Mexican food. I could eat it for every meal. But my favorite food is lasagna. That’s what I pick for my birthday every year. So when my friend Michelle told me about her Taco Lasagna recipe, I was all in.

She makes it with the lasagna noodles that you don’t cook ahead of time. So you can go that route if you want. Personally, though, that way is a little crunchy for me, so I would suggest traditional lasagna noodles. It does add a little more time to your cooking process, but I think it’s worth it.

How To Make Taco Lasagna:

Pre-heat the oven to 400 F.

Cook and drain your lasagna noodles. Set them aside.

Brown (and drain) the meat. Add the taco seasoning and cook two more minutes.

Mix together your cheese and egg.

Start layering.

Start with a light layer of salsa on the bottom of an 8×13-inch cake pan, so nothing sticks or burns to the bottom.

Make a layer, on top of the salsa, that’s four lasagna noodles wide.

Top the lasagna noodles with half of the meat, then 1/3 of the cheese and egg mixture, then some salsa.

Lay down four more lasagna noodles, the rest of the meat, 1/3 of the cheese and egg mixture, and the rest of the salsa.

Lay down the four remaining noodles, then the rest of the cheese and egg mixture.

Cover the pan with foil and bake for 45 to 60 minutes until the noodles are soft.

Garnish with sour cream and chopped green onions. You can also serve it with some additional salsa on top.

Ingredients

  • 12 lasagna noodles
  • 20 oz. ground beef or ground turkey
  • 3 tablespoons taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 egg
  • 2 cups salsa
  • Green onion
  • Sour cream

Instructions

  1. Pre-heat the oven to 400 F.
