If you’re looking for an festive treat for St. Patrick’s Day, these St. Patrick’s Day Pot Of Gold Cookies are for you. They’re also the perfect easy recipe if you need some sort of party favors but you just don’t have the time to bake something.
Why?
Because the base of these is a store-bought cookie.
So really, all you’re doing is just decorating. And the end result is so incredibly adorable that everyone will love them — and no one will realize that you didn’t actually bake cookies.

St. Patrick’s Day Pot Of Gold Cookies Recipe

This isn’t a full recipe teaching you how to bake these cookies. Rather, it’s more of a tutorial to show you how to decorate them for a special occasion.
And that special occasion doesn’t have to be St. Patrick’s Day. We did list these as that, but they’d work for a rainbow-themed birthday party or baby shower too.
St. Patrick’s Day Pot Of Gold Cookies Ingredients:
- 3/4 tub of cream cheese frosting
- 4 drops blue food coloring
- 12 chocolate and marshmallow cookies
- 6 rainbow Airheads candies
- 48 mini marshmallows
How To Make St. Patrick’s Day Pot Of Gold Cookies:
You want to start with room temperature frosting.
Spoon the cream cheese frosting into a medium bowl.
Add in the drops of food coloring and stir gently until the color is incorporated.
With a hand mixer, whip the frosting until it’s fluffy.
Set a 1M piping tip on a piping bag. Add in the whipped frosting.
Pipe a flat layer of frosting on top of the chocolate and marshmallow cookies.
The easiest way to do this is to start at the edge of the cookie and pipe small circles around the entire cookie, working your way to the center. Be sure to go around the top edge of the cookie so when you look down on them you only see the frosting.
Cut the rainbow Airhead candies in half.
Fold one of the pieces into a u shape so it looks like a candy rainbow. Stick in the center of the frosting.
Add four mini marshmallows to the cookie, two on each end of the rainbow.
Continue until you’ve finished all of the cookies.
Side note: Because of the size of these, you can’t really fit an actual pot of gold on them. If you wanted to try and squeeze one in, you could melt a little chocolate, put it on top of a Rolo chocolate, and put yellow candies on top to look like a pot filled with coins.
That was actually our original plan for these, but it just didn’t fit well at all. The more I looked at it that way, the more I hated it because the proportions were off.

You absolutely can use one of your favorite cookie recipes to make these. Homemade cookies generally are shorter than these cookies, so we suggest baking your favorite cookie recipe as cookie cups instead of regular cookies. Use a silicone mini muffin pan to bake the batter rather than baking the cookies on a cookie sheet to get the height you get from the store bought cookies we used.
Keep in mind that the cookies themselves are actually the pots for the pots of gold. That’s why we picked these oversized cookies that look like black cauldrons. We picked these up from ALDI, but you can get similar chocolate and marshmallow cookies at Walmart.
Honestly, store bought frosting works great in this. You don’t have to be all fancy and make royal icing. Plus, I’m not actually sure how well the rainbow candy would be in the royal icing. So go with the store bought tub.
Now, I know. Store bought frosting is a little bit lackluster. That’s why you whip it with a hand mixer before using it. It’ll add air into the frosting, which gives it a more appealing texture.
Extra bonus: It also causes the frosting to expand, which means more frosting for the same amount of money. That’s definitely a frugal tip.
You absolutely can make these ahead of time. That’s actually better because it’ll give the frosting a little time to harden. We don’t recommend making them more than a week ahead of time, though, because you risk the marshmallows drying out and hardening.
Store these cookies in an airtight container. You can store them at room temperature for about a week.
Make sure to store them in a single layer. You don’t want to crush the rainbows with the weight of a cookie on top.
