I enjoy cooking dinner because I really like my food. I know that sounds a little conceited, but the good thing about cooking is you can season things to fit your taste buds. So, I really enjoy everything that I make.

But I don’t enjoy the cleanup.

Sometimes I’m making multiple things in multiple bowls on the stove and the cleanup takes longer than the eating does.

That’s why I really like sheet pan dinners. Everything is cooked in the same pan, so when you’re done with dinner, the only thing to clean is that pan.

Chicken Vesuvio is a really hardy Italian dish that will please the whole family. Potatoes, carrots, onions, bell peppers, chicken, and sausage are all cooked together, so the flavors mingle to make a really delicious dinner.

The easiest way to do this is by making Sheet Pan Chicken Vesuvio. All of the ingredients cooked together at the same time leave you with just one large sheet pan to clean.

Eggplant parmesan is one of my absolute favorite meals, but it’s so much work, so I only eat it on special occasions, like when Pete makes it for my birthday.

This sheet pan eggplant parmesan version is so much easier.

You’ll use a sheet pan a couple times because you start roasting by the eggplant on sheet pans and then assemble a large, but thin eggplant parmesan on that sheet pan, and bake it for a delicious vegetarian dinner.

One of my new favorite staples is Sheet Pan Chicken Fajitas. It’s so flavorful and is such an easy dinner.

Three colorful bell peppers and an onion, plus chicken, lime, garlic, and seasoning are all added to a large sheet pan and baked. When it’s almost done, you warm tortillas in the oven. Everything finishes at the same time and all your cleaning up is that one pan.

We usually serve this with cilantro lime rice, which means we’re also washing a rice cooker, but it’s still only two things to clean.

Sausage and peppers is such a popular party dish up north. It’s usually served in a large tray, sometimes with bread so you can make it into a sandwich.

Regardless of how you serve it, you can make Sheet Pan Sausage And Peppers. It’s so much easier because it all cooks on one pan.

Hawaiian roll sliders got to be so popular a few years ago, and once you make them, you’ll understand why. You cut the Hawaiian roll in half and make 12 sandwiches at once. So much easier than making one at a time.

One of our favorite variations of this are Cheeseburger Sliders With Hawaiian Rolls. You do have to cook the meat in its own pan first, but you build and bake the sandwiches on a sheet pan.

One of the easiest meals we’ve ever made is this sheet pan sausage and potatoes with green beans. You cut everything, put it in sections on a sheet pan, top with butter and seasoning, and bake. That’s it. It’s the perfect weeknight dinner.

You can change the veggies every time, so it feels like a different dinner. But the process (and cleanup) is the same easy method.
