Grilled Vegetables In Foil Packets Recipe

Grilled Vegetables In Foil Packets Ingredients:
- 2 zucchini
- 3 yellow squash
- 3 cloves of garlic, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried oregano
How To Make Grilled Vegetables In Foil Packets:
Clean the zucchini and squash.
Chop the zucchini and squash into 1/8-inch slices. The thinner you cut them, the quicker they will cook on the grill.
Add the chopped garlic.
Drizzle with olive oil, then season with salt, pepper, and dried oregano (I use fresh dried oregano from our garden, but you can use store-bought instead).
Toss to make sure they’re coated.
Put the vegetables in the center of a piece of foil.
Fold in two opposite sides, then roll up the other two sides to form your foil packet.
If you need, you can put a second piece of foil over it to assure the vegetables don’t fall out.
Cook on the grill for 20 to 30 minutes until the vegetables are fork tender.
Serve warm.
You can do this with other combinations of vegetables too, like red and green peppers, banana peppers, onions, etc. Just keep in mind that if you change the vegetables, you may need to adjust your cooking time.
