I really like sandwiches, but if I’m we’re going out to a sandwich shop for lunch, I usually choose roast beef.
That’s delicious, but it’s not Lent-friendly.
So what if you’re craving a sandwich on a Friday during Lent? Most cold cuts are a no go. But you can have a vegetarian sandwich.
To help, I put together a great list of vegetarian sandwiches that are perfect for Lent.
The requirement for any sandwich to get on this list is that they have to be completely vegetarian as is. If a sandwich was originally made with any meat, it didn’t make the cut.
And, we didn’t include any fish sandwiches on here.
Small aside: Catholics abstain from flesh meat on Fridays during Lent. That’s an old word that we don’t use anymore, but it means mammals and birds, but excludes fish.
I’ve heard it explained as, “Jesus gave his flesh for us, so we give us flesh meat.” Since fish isn’t considered flesh meat, by definition, anything pescatarian is fine to consume.
But, back in the day, fish was abundant and cheap (so many of Jesus’ followers were fishermen, right?) so it was considered a poor man’s food. Now, it’s expensive and a luxury. So, because Fridays are meant to be days of sacrifice, I don’t eat fish on Fridays either. If you’re the same way, this list is absolutely for you.

Mini Brie Grilled Cheese With Chimichurri
When we were in Nashville last year, we had mini brie grilled cheese sandwiches that were topped with chimichurri that were so simple, but packed with so much flavor, that I instantly had to recreate them when we came home.
You can make a ton of grilled cheese sandwiches at once, which is great if you have a crowd to feed (which will probably happen since winter break and Lent usually overlap).

Avocado Toast Bruschetta
Bruschetta is basically an open-faced sandwich, so it makes this list. Plus, it’s one of our current obsessions because it’s so good.
Mashed avocado is the star of this flavor-filled avocado toast bruschetta. But, the combination of the other flavors are why you don’t miss the meat.

Egg Salad Sandwich
This egg salad sandwich is the perfect vegetarian sandwich. It’s packed with eggs, of course, but also has crunchy elements that give the sandwich a little bit of color and texture.
Plus, the sandwich comes together in mere minutes, so it’s perfect for when you have limited time. And, you can make the egg salad ahead of time, then assemble the sandwich when you’re ready for lunch, making your life just a little bit easier.

Caprese Grilled Cheese Sandwich
This caprese grilled cheese sandwich is a spin on a caprese salad, turning it into a really satisfying lunch option.
It’s best served warm, because of the melted cheese, so you want to make this for lunch on a Friday that you’re working from home.

Cheesy Egg Sandwich
This cheesy egg sandwich is my go to brunch sandwich, even when it’s not Lent. It’s just so delicious and the perfect way to start a day.
The melty cheese oozes out of this sandwich, which makes it so craveable.
Pair it with homemade home fries and you have a really great lunch for when you want to skip pizza night on a Friday during Lent.

Vegan Chickpea “Tuna” Salad Sandwich
Tuna, obviously, isn’t vegetarian. So, if you want a vegetarian version, try this chickpea “tuna” salad sandwich.
Chickpeas are substituted for canned tuna consistency, giving you the same consistency but without the fish.

Portabella Mushroom Cheesesteaks
These portabella mushroom cheesesteak sandwiches are definitely one of my favorite recipes ever. I make this all the time, even when it’s not Lent. It’s just a really good veggie sandwich.
Portabella mushroom slices mimic the meat, so you don’t miss it. And, the melted cheese on top is so good too.

Salad Wrap
If you’re looking for a wrap instead of a traditional sandwich, go with this salad wrap.
It’s basically all the vegetables you get in a house salad, but served in a wrap instead of in a bowl. And that makes it easier to transport to work because you don’t need to find a container, wash it after, and then remember to bring it home. Just wrap this in foil, eat it, and throw the foil away.

If you really want to have something meat-like for lunch, and these vegetarian sandwich ideas aren’t gonna cut it, you can actually purchase Tofurky deli slices online. You can get hickory smoked, peppered, or oven roasted deli slices.
