I try to eat healthy as often as possible. The other day, there was a huge organic spinach mix salad green box in the discount produce section of the store. So I cooked some tasty chicken, added some more veggies, and made a tasty salad.

Sometimes, though, salads can be a little boring. Transform them by making a salad wrap.

It’s a great way to eat a salad, without feeling like you’re eating a salad.

How To Make A Salad Wrap:

Chop the tomato, onion, and celery, then set aside.

Spread the Greek yogurt on the wrap.

Stuff the wrap with the mixed greens, carrots, tomato, onion, celery, and cheese.

Roll the wrap.

That’s it. This was actually so good. You can stuff the salad wrap with anything else you might find in a salad, like a hard boiled egg, bacon, bleu cheese crumbles, etc. You could even add chicken too, although then you couldn’t have this for Meatless Monday.

Ingredients

  • 1 Roma tomato
  • 1/2 onion
  • 2 celery stalks
  • 1/4 cup Greek yogurt
  • 2 whole wheat wraps
  • Bagged mixed greens salad
  • Shredded carrots
  • 1/2 cup shredded cheeseChop the tomato, onion, and celery, then set aside.

Instructions

  2. Spread the Greek yogurt on the wrap.
  3. Stuff the wrap with the mixed greens, carrots, tomato, onion, celery, and cheese.
  4. Roll the wrap.
