I like chicken. It’s the main protein we eat on a regular basis, but sometimes, you need to dress it up. That’s how this cheesy bacon and mushroom chicken recipe was born.

It’s a really easy chicken recipe because the chicken is naked. So no breading and dredging the chicken.

Leaving the chicken naked (and cooking it with just seasoning) makes this recipe a lot quicker meaning you can make this tasty chicken recipe on a weeknight.

This cheesy bacon and mushroom chicken recipe is definitely a pretty special weeknight dinner.

If you don’t like mushrooms, don’t run away from this cheesy bacon and mushroom chicken recipe. You can substitute onions for the mushrooms.

How To Make Cheesy Bacon And Mushroom Chicken:

Three pieces of bacon in a pan.

Cook the bacon until it is crisp.

Set it aside to cool, but leave the bacon grease behind in the pan. When the bacon has cooled, rough chop it into pieces.

Chopped mushrooms in a pan.

Drain the canned mushrooms and rough chop them.

Sauté the mushrooms in the bacon grease until they’re soft and cooked through, about ten minutes.

Set the mushrooms aside, making sure to leave behind any remaining bacon grease.

Chicken breast tenderloins in a pan.

Season the chicken breast tenderloins with salt, pepper, and onion powder on both sides.

Cook the chicken, flipping halfway through the cook.

Push the cooked chicken to the middle of the pan.

Cover the chicken with the bacon pieces and cooked mushrooms.

Pour the shredded cheese on top of the pile.

Cover the pile with a lid and leave it until the cheese is completely melted, about five minutes.

Canned mushrooms vs. fresh mushrooms?

For the most part, I prefer fresh mushrooms over canned mushrooms. And I have a lot of recipes that use fresh mushrooms.

But, I use canned mushrooms in homemade mushroom soup and in this cheesy bacon and mushroom chicken.

Why?

For this recipe, specifically, I find that the canned mushrooms hold up better than fresh mushrooms do. Fresh mushrooms generally cook down so much that you need double the amount of fresh mushrooms than you would of canned mushrooms.

Canned mushrooms don’t usually have as much flavor as fresh mushrooms, but you’re cooking these in bacon grease. So the canned mushrooms will really absorb that flavor and taste delicious. And since they don’t cook down as much, they’ll lend a nice texture to the cheesy bacon and mushroom chicken.

Plus, canned mushrooms last longer than fresh mushrooms do. So if you have a couple cans of canned mushrooms in your pantry, waiting for you to cook them, this is a great way to use them. And sometimes, we need to use those canned products we store in our pantry in times of hurricanes.

If you’re worried about sodium (which a lot of people are when they buy canned products), you can rinse the canned mushrooms off before using them. And that goes for any recipe, not just this one.

Cheesy Bacon And Mushroom Chicken: Frequently Asked Questions

Can you use any other cheese in this recipe?

I really like cheddar cheese with bacon. The combination is delicious. But, if you’re in the mood for this cheesy bacon and mushroom chicken, but don’t have cheddar cheese, that’s fine. Most cheeses will work.

Shredded mozzarella or Colby Jack would be great substitutions. 

If all you have is Swiss cheese slices, you could break those up into pieces and then use that.

The only types of cheese that I wouldn’t suggest for this would be a cheese that doesn’t melt well. So skip feta or bleu cheese. I would skip Parmesan cheese too because it wouldn’t give you that really good melted cheese pull that you’re looking for with this, but if grated Parmesan is all you have, it would work in a pinch since it does melt.

Just a note about cheese. I usually don’t prefer pre-shredded cheese when I’m melting it. Cheese that comes shredded loses a lot of its moisture and doesn’t usually melt as well as cheese that comes in a block and you shred at home.

In this recipe, though, because you’re tenting the cheese by putting a lid on top of the pan, the cheese melts really well and creates that gooey pull that you’re looking for.

Do you have to use thick cut bacon?

Don’t get too hung up on the thick cut bacon in this recipe. It works great and you end up getting more of a bacon bite with it.

But, if all you have is regular cut bacon, that’s fine. Just use five to six slices of it instead of the three slices of thick cut bacon that the recipe calls for.

Why don’t you bread the chicken?

Chicken cutlets are great when you have the time to bread them.

You need to rinse them (okay, there’s controversy there, but I always rinse chicken before I cook it).
Then, dredge the cutlets in flour, then egg, then a breadcrumb layer (just breadcrumbs is fine, Panko is great, a little bit of seasoning added to a combination of both of those is amazing).
Then you have to heat oil in a pan and cook the chicken.

And then, for this recipe, you still have to cook the bacon and mushrooms, then melt the cheese on top.

So, to do all that on a weeknight is a lot of effort. And it’s possible, but after you work all day long, it’s just more effort than you want to put into dinner. Plus, because there are already so many flavors in this cheesy bacon and mushroom chicken, you don’t need the extra flavoring that the breading will bring. Use naked chicken, cooked in bacon grease with just seasonings, and it’ll be great.
