I like chicken. I also really like that you can make it in so many different ways that it always feels like a different meal. Plus, you can do some crazy things with chicken, like crust it in pork rinds.

Yes, that’s exactly what I did for dinner recently. We received some Southern Recipe Small Batch pork rinds for review and I immediately thought to make Pork Rind-Crusted Chicken Fingers, using the rinds instead of breadcrumbs.

Oh my gosh. It was actually better than I could have ever expected. And super easy too. I used the Pineapple Ancho Chile pork rinds and served the chicken fingers with mango salsa. Such a good meal.

Pork Rind-Crusted Chicken Fingers

This pork rind-crusted chicken finger recipe is a great twist on a traditional chicken finger. Get the recipe at www.drugstoredivas.net.

What You’ll Need:

  • 4 chicken breast tenderloins
  • 3/4 cup flour
  • 1 egg
  • 1 cup Southern Recipe Small Batch Pineapple Ancho Chile pork rinds

What You’ll Do:

Pre-heat the oven to 350.

Crush the pork rinds in a bowl until you form a powder with a Panko-like consistency.

In a separate bowl, whisk an egg.

Cut the chicken breast tenderloins in half. Dip a piece in the flour, then the egg, then the pork rind crumbles, and place it on a foil-lined cookie sheet.

Repeat with all the pieces of chicken.

Bake the chicken fingers for about 30 minutes until the chicken is cooked through.

Serve with mango salsa.

These pork rinds were a big hit. They come in four flavors: the aforementioned Pineapple Ancho Chile, Korean Kimchi BBQ, Spicy Dill, and Sea Salt & Cracked Black Pepper. The pork rinds are gluten free, low carb, and baked in sunflower oil. Plus, the ingredient list is also really easy to read. The pork rinds are not filled with a bunch of chemicals, so you can feel better about snacking on these — which my mom and Pete have been loving to do.

Kmart is one of my favorite stores because you can pick up everything there. Our local store sells everything from wine to window cleaner, clothes to candy, plus really cute Adirondack chairs that are perfect in our garage. It’s one stop shopping, so you can run in for milk and leave with makeup for a night out. Anything you want, you can find at Kmart. And that’s why it’s a great place to go for your Easter basket needs too.

Tips For Putting Together An Easter Basket At Kmart

Start with candy.
Kmart has so much Easter candy,  you’ll be sure to find your recipients’ favorites there. You can pick up packs of marshmallows, chocolate bunnies, jelly beans, and more. Plus,  you can get really good prices on them too. Through April 8,  you can get an Easter 6-pack candy or Lindt Gold Bunny on sale for $2.50. From April 9 to 15, you can get Easter packaged chocolates on sale for $1.50 on sale.

Personally,  I’m a fan of mixing some candy with some chocolate. A little variety goes a long way.

Add something non-chocolate.
The age of your recipient will determine what else you add to the basket. For a young child, check out the toy section. You can also pick up art supplies. For a teen with a new car, you can head to Kmart’s automotive section. For your mom, you can check out their gardening section. There’s really something fun for everyone.

A really cute idea would be to add an Easter outfit in the basket as well. Kmart has a ton of Easter outfits for boys and girls, plus super cute new shoes too. For older kids, you can pick out a cute top instead of a full outfit.

Use your points.
Part of why I really love Kmart is because of Shop Your Way rewards. When you make a purchase, you earn a certain percentage back in Shop Your Way points. My father-in-law’s 70th birthday was recently, and we’re heading to Washington, DC next month to celebrate. We’re really excited. Pete and I have been planning a weekend birthday trip for his dad, and I figured our planning could really help if you’re planning any upcoming weekend birthday trips.

How To Plan A Weekend Birthday Trip

Pick a location.
First and foremost, you have to figure out where you’re going. For a weekend, you’re probably not going to fly anywhere. Instead, you probably need to head somewhere within driving distance. Look at a map and find somewhere you can get to in a handful of hours.

For us,  Pete realized DC is halfway between us and his dad.  We could both drive there in a morning and still have the afternoon and evening to hang out.

Find activities.
Once you figure out where you’re going, figure out what you want to do there. Look on Pinterest, travel sites, the city’s Visitor Bureau, etc. Write down a ton of ideas, then start to narrow them down based on where everything is located. You don’t want to overbook yourself, so be sure to choose a couple great activities for each day. But leave time in case there’s traffic, an activity is crowded, etc.

Book a hotel.
Once you’ve settled on a location and found things you can do there, book a hotel. You can ask friends for recommendations or look on discount hotel sites. In addition to prices, those often have reviews from people who have stayed there previously. Be sure to check out amenities as well. A hotel could be a great price, but if you’re paying a ton for parking, it’s not a great deal anymore.

Personally, I prefer hotels that offer a complementary breakfast. If you can have breakfast in the hotel for free, you won’t have to spend as much money outside of the hotel.

Pack.
Figure out what you need for the weekend, including any dressy clothes if you’re planning on heading to a nice dinner to celebrate, plus shoes. And pajamas. I’m writing that because I have a tendency to forget to pack pajamas when we go away, and then I end  up wearing whatever Pete packed.

Bring a gift.
If it’s your birthday, you don’t have to bring yourself a gift. I mean, you could, but that would be a little ridiculous. If you’re going away for someone else’s birthday, bring a gift with you.

I’m going to let you in on a secret, but you have to keep the secret if you know Pete’s dad. We are bringing him a decade box from Old Time Candy. Let’s chat about it for a minute. Old Time Candy is a site where you can purchase, you guessed it, candy from the past. You can pick and choose, or you can purchase by decades: 1950’s to 1990’s. (You can search candy back to pre-1920’s, but this box starts at the 1950’s). The site suggests you pick the decade when the recipient was 10, so we picked the 1950’s box.

Now, obviously, I was not around in the 1950’s, so I wasn’t sure what to expect in the box. When it arrived, some of the candy was familiar to me, like wax bottles and a candy necklace. But there were some that I had never seen before, like a licorice pipe. That one had me laughing. Could you imagine how up in arms parents of today would be if stores sold licorice pipes?

There was a great mix of full-size candies (like Raisinettes and Bonomo’s Turkish Taffy) and small, individually-wrapped candies (like Honeycombed Peanuts and Walnettos). It was so fun for me to look through everything, and it wasn’t even my nostalgia. I was just imagining how I would be with the 1990’s box, snapping back to my childhood as I picked up Warheads and Cry Baby’s. And that made me think of how Pete’s dad would be going through this box. It’s less about the candy and more about the memories.

So of course, that made me think about how much my dad would love this. Yup, I just found his Father’s Day gift (and maybe his Christmas gift too). But back to this box for Pete’s dad. I’ll be honest: I never liked fresh pasta. It just always tasted so off to me, which is a hard thing to describe, but that’s the truth. Pete is a huge fan of fresh pasta, so when my grandma got him a pasta maker last Christmas, I let out a little sigh. It meant unfavorable fresh pasta would be in our home.

And then Pete made it.

It was amazing.

All these high-end restaurants making fresh pasta not to my taste, but Pete’s recipe is so good. He makes it often, and I just love it. He uses the same dough recipe for spaghetti, lasagna noodles, and ravioli, too — and it’s amazing every time. Pete used it over the weekend to make ravioli stuffed with my favorite kale pesto. What a delicious dinner!

Homemade Kale Pesto Ravioli

What You’ll Need:

For the ravioli:

  • 3 1/2 cups flour
  • 4 eggs
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 8oz. ricotta cheese

For the kale pesto:

  • 2 cups kale, packed
  • 1 clove garlic
  • 1/3 cup walnuts, chopped
  • 2 tbsp. lemon juice
  • 1/2 cup olive oil
  • 1/2 cup grated parmesean
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

What You’ll Do:

Make the kale pesto.

Beat the eggs. Put the eggs, flour, and salt in a stand mixer and beat on low for about two minutes.

The dough may be crumbly. Add a bit of water and mix again.

When your hands are clean, wrap your dough in plastic wrap and let it rest about 20 minutes.

Cut a chunk of dough and roll it through your pasta maker. Roll it until you reach your desired thickness, then cut the sheet in half.

Put a few dollops of kale pesto on one half of the dough. Add a dollop of ricotta, then, cover that with the second piece of dough. Using a ravioli cutter (which is amazing because it pinches it closed for you) cut the ravioli.

Continue until you’re out of dough.

Boil them in boiling water for three minutes. Drizzle with oil olive and a dollop of kale pesto, then serve.

1 Night Movie Review

1 Night Movie Review

Today is Valentine’s Day, one of my favorite days of the year. It’s just a day where it’s okay to let your heart fill and bubble over with love and hope and happily ever after. Plus, it’s also a really good excuse to binge watch sappy romantic movies. And sure, maybe you choose the classics, but this year, I watched an advanced copy of Level 33’s new film “1 Night.”

It’s cute.

It’s also really predictable, but let’s be honest: all the best romantic comedies are.

See, I’m the kind of person who reads enough of a book to find out who the main characters are, then reads the end to find out what happens, and then goes back to finish the middle. I don’t like surprises, I don’t like not knowing what is going to happen, and I don’t like not being in charge.

So a suspense, a cliffhanger, a show on a streaming network that still has a few seasons to go … not for me. But a romantic comedy and it’s predictability and its happily ever after, I will sit through every one. And throw in a line like, “(Women) don’t want nice. They want extraordinary. They don’t want a hug. They want a punch in the gut.” Yup, you’ve got me hooked.

Justin Chatwin’s Drew says it to Kyle Allen’s Andy, two of only seven speaking characters in the just-over-one-hour movie. It’s one of the better lines in the movie, although there are a couple that jump out at you. What really stand out, though, is just how adorable Andy and Bea (Isabelle Fuhrman) are together. It’s their prom night, and they’re high school seniors. It’s a time when it seems there’s a world of opportunity in front of them. Except, if we’re all being honest, when you’re almost-graduated teenagers, there’s less possibility than notion of possibility. They’re kids. What’s there to do besides find the gravity in working a boring summer job. But being so young puts such monumental significance on everything and that includes falling in love.

Oh how we fall when we are babies.

And how we fall when we see that young love. It’s just something so pure, and that’s exactly what we — and Drew and Elizabeth (Anna Camp) — witness.

The movie actually ends with a twist, as far as romantic comedies are concerned, but not as the viewers are concerned. You’ll put it together right away. It doesn’t take away from the movie. It actually makes you like the characters more because, for me, if not for that revelation, I wouldn’t have cared for Elizabeth. Pitch Perfect’s Anna Camp is the highest billed on this, but I think she’s the weakest actor of the four leads.
