No Bake Watermelon Cake Pops Recipe

If you’ve been around here for a while, you know I’m a big fan of cute desserts. So when we have our twice monthly potluck at our clubhouse, I always bring something cute. People have sort of gotten used to that by now.

I try to keep them with the season, so when it’s summertime, I can make these adorable No Bake Watermelon Cake Pops.

They’re not traditional cake pops, made from leftover cake and mixed with icing. Instead, these are no bake cake pops. Which is perfect for summer because honestly, no one wants to turn on the oven and bake during the summer.

No Bake Watermelon Cake Pops Ingredients:

How To Make No Bake Watermelon Cake Pops:

Creamed butter in a bowl.

Let the butter come to room temperature, then cream the butter.

If your butter is taking a while to come to room temperature, you can put it in the microwave for 20 to 30 seconds. You don’t want to melt it. That won’t work. You need it to be thick and creamy, which is why you can’t melt it (but also why it can’t be cold-cold either because it won’t be creamy that way).

Add the white cake mix and flour to the butter. Mix until slightly combined.

Add in the chocolate chips.

Add in the food coloring.

Stir until the color is throughout.

It’s a lot easier (and quicker) if you mix this by hand, sort of like you’re kneading a dough. That will distribute the color quicker than using a spoon to stir.

Use a melon baller to scoop balls of the batter.

Roll them in your hands into a circle or oval (because watermelon can be both) and put them onto cookie sheet. We line ours with a silicone baking mat, but if you don’t have one, you can use parchment paper.

Continue until you’re out of batter. You should be able to make about four dozen.

Put the cookie sheet in the freeze for an hour until they harden.

In a microwavable safe bowl, microwave the green candy melts according to the package.

The easiest way to do this is to microwave them for a minute and stir completely. If they’re not melted, microwave for an additional 30 seconds and stir until the candy melts are melted.

What’s great about using candy melts is that if they harden before you’re done, you can simply put them back in the microwave. And if you microwave them for too long, they won’t burn like chocolate chips. Instead, you just want to add some coconut oil into bowl and stir it. This will smooth the candy melts out to allow you to dip the cake pops.

Drop the cake ball into the green candy melts, coating all sides. Use a fork to remove it and shake off any excess candy melts.

Put them back on the silicone baking mat-lined cookie sheet. Continue until they’re all done.

Stick the cookie sheet in the freezer for about an hour until the green candy melts harden.

Watermelon Cake Pops: Frequently Asked Questions

Do these taste like watermelon?

These cake pops are watermelon themed, but not watermelon flavored. If you want, you can add watermelon extract to the batter, when you add the food coloring, to flavor them.

Personally, we haven’t tried that, so I can’t tell you exactly how much extract you would need to add to make them watermelon flavored.

Do you have to use food coloring?

If you don’t like food coloring, or don’t want to use it, you can purchase a box of strawberry or red velvet cake mix instead.

In truth, though, unless you’re getting an all natural cake mix, any box of red cake mix will have food coloring in it, so you won’t be avoiding it. But, you won’t have to mix it in and worry about getting your hands dirty, so there’s that perk.

Do you have to put them in the freezer before adding the candy melts?

These aren’t a dessert that you can rush. You can’t skip putting them in the freezer. If the cake pops are too warm when you try to dip them in the candy melts, they’ll fall apart. If the chocolate chips are warm and on the outside of the cake pop, they’ll end up melting and making a mess of the green candy melts.

How can you store cake pops?

Store cake pops in an airtight container. They will stay fresh for up to a week in the fridge and up to a month in the freezer.

So, if you need to, you can make these ahead of time and store them in the fridge or freezer until you’re ready to serve them at a party.

  • 1 package white cake mix
  • 1/2 cup all purpose flour
  • 1/2 cup mini chocolate chips
  • 10 drops pink food coloring
  • 2 packages green candy melts

Instructions

  2. Add the white cake mix and flour to the butter. Mix until slightly combined.
  3. Add in the chocolate chips.
  4. Add in the food coloring. Stir until the color is throughout.
  5. Use a melon baller to scoop balls of the batter.
