This Vegetarian Couscous is packed with zucchini, eggplant, tomatoes, and chickpeas. You won’t even miss the meat.
We had a New Year’s Eve party and everyone brought unhealthy food. That’s the best food for a party, honestly. And I added to it by making way too many sweet and spicy meatballs. But for way too long after, we were eating unhealthy leftovers for dinner. Once they were done, I had to make something healthy. And Vegetarian Couscous with zucchini, eggplant, chickpeas, and tomatoes was it.
This is actually based off a recipe I found on HelloFresh‘s website. If you remember, we tried HelloFresh with a discount code for a friend. We loved the recipes, but my problem was with the cost. This recipe would have cost us about $30 for three servings from HelloFresh. Instead, we paid about $8 for the ingredients to make three servings.
Vegetarian Couscous With Zucchini, Eggplant, Chickpeas, And Tomatoes
What You’ll Need:
- 1 zucchini
- 1 globe eggplant
- 1/3 container cherry tomatoes
- 3 green onions
- 3 cloves of garlic
- 1 can chickpeas, drained
- 6oz. couscous
- 1/2 cup vegetable broth
- 4oz. feta cheese
- Squeeze of lemon juice
- Olive oil
- Salt and pepper (to taste)
What You’ll Do:
Pre-heat the oven to 425.
Chop the bottoms off the green onions. Chop the green onions. Put the whites and half the greens onto a baking sheet. Set the rest of the green onions aside.
Peel and dice the eggplant, zucchini, and three of the garlic cloves. Cut the tomatoes in half. Add all the vegetables to the baking sheet with the green onions. Drizzle with olive oil and top with salt and pepper. Stir.
Put the chickpeas on a second baking sheet and drizzle with olive oil.
Bake both pans, simultaneously, for 20 minutes.
While that’s cooking, chop the remaining two pieces of garlic. Cook that in a pot with the rest of the green onions for two minutes.
Add the vegetable broth to the pot and bring it to a boil.
Add the couscous to the pot and cook as directed on the package. When it’s done, fluff it with a spoon and squeeze a dash of lemon juice over it.
Stir the vegetables, chickpeas, and feta cheese into the couscous. Stir it together and serve immediately.

This recipe sounds really delicious and easy to prepare.I have seen many recipes with couscous,but I haven't tried so far.I want to look in the supermarket for couscous and try this recipe.
