Let’s talk about pumpkin spice for a minute.
It’s. Not. For. Me. And I know pumpkin spice flavored things are just the spices that go into pumpkin pie … not the pumpkin. People assume it’s pumpkin and spices, but nope. Just the spices. But still, I’m not a fan of pumpkin recipes. No pumpkin pie; no Pumpkin Spice Latte; none of it. But Pumpkin Spice Weight Watchers muffins? I’m in.
And that’s weird because you put an entire can of pumpkin puree into these. So you would think they would taste as pumpkin-y as pumpkin pie.
But to my surprise, these don’t actually have a strong pumpkin flavor. They taste like a spice cake, just without the cream cheese frosting. So guess who has a new favorite treat.
Plus, it’s such an easy recipe with only 3 ingredients: canned pumpkin, a box of cake mix, and water.

Pumpkin Spice Weight Watchers Muffins

Pumpkin Spice Weight Watchers Muffins Ingredients:
- 1 box of spice cake mix
- 15 oz. can of pumpkin puree
- 3/4 cup water
How To Make Pumpkin Spice Weight Watchers Muffins:
Pre-heat the oven to 350 F.

In a large bowl, mix together the spice cake mix, canned pumpkin, and water.

Fill each cavity of a mini muffin pan almost to the top.
Side note: We use a nonstick pan so we don’t need muffin liners. If your pan isn’t nonstick and you’re on a WW plan, you should place cupcake liners down and then add the batter into those. You don’t want to have to calculate points in a cooking spray.
Bake for about 14 minutes.

Set on a cooling rack.
Continue until you run out of batter. If you have multiple mini muffin tins, you can bake them all at once. If not, you’ll have to do multiple batches because you should be able to make 52 muffins total.
Subsequent batches may bake a little quicker, so check them around 12 minutes.

What is pumpkin spice?
So, I brought it up above, but I figured I would go into pumpkin spice in more detail here.
So pumpkin spice — like a pumpkin spice latte — does not have any pumpkin in it. Your PSL isn’t a pumpkin latte. It’s a latte made with the spices that would go into a pumpkin pie.
Originally, it was called “Pumpkin Pie Spice,” but that sounds bulky, so it was shortened to “Pumpkin Spice” — and caused a lot of confusion.
Pumpkin Spice is, generally, a combination of ground cinnamon, ground closed, and ground nutmeg. Many at home recipes also call for ground ginger, although that’s not required.
You can add pumpkin spice into any pies, like apple pie. Or coffee.
This recipe isn’t pumpkin spice in that sense because it actually has pumpkin. This recipe is combining pumpkin and a spice cake, for pumpkin spice in the truest sense.

This recipe Fits The Bill: EASY & TASTY. Do you have the nutritional counts for the mimis? I am a diabetic and the carb count is most important thing here.

Not that it is better but is healthier for me....I use this recipe plus 1 medium peeled and grated with a hand cheese grater and one carrot grated also. Just fold the apple and carrot into the batter. Get 18 muffins. When making for grandkids I add butterscotch chips then send the rest home with them.
