Let’s talk about pumpkin spice for a minute. It’s. Not. For. Me. Should I say it louder for the people in the back? Like no. Me and pumpkin are not friends. And I know pumpkin spice flavored things are just the spices that go into pumpkin pie … not the pumpkin. People assume it’s pumpkin and spices, but nope. Just the spices. But still, it’s a no from me. No pumpkin pie; no PSL; none of it. But Pumpkin Spice Weight Watchers muffins? I’m in.

And that’s weird because you put an entire can of pumpkin into these. So you would think they would taste as pumpkin-y as pumpkin pie.

And I hate pumpkin pie.

But to my surprise, these don’t actually taste anything like pumpkin. They taste like a spice cake. So guess who has a new favorite treat.

Plus, it’s so easy. The entire recipe is only 3 ingredients: canned pumpkin, a box of cake mix, and water.

So easy.

Pre-heat the oven to 350.

Mix together the spice cake mix, canned pumpkin, and water.

Fill each cavity of a mini muffin pan almost to the top.

Bake for about 14 minutes.

Set on a cooling rack.

Continue until you run out of batter. You should be able to make 52 muffins total.

Subsequent batches may bake a little quicker, so check them around 12 minutes.

How many Weight Watchers points are these?

If you’re following Weight Watchers, this Pumpkin Spice Muffins recipe is great too. One box of cake mix is 72 points, and pumpkin and water are free. You’ll get 52 muffins out of this recipe, so each one is only 1.5 Freestyle points. But there’s no such thing as half points, so just have 2 for 3 points.

Or four for 6 points.

I won’t judge.

Can you make these as full sized muffins?

The short answer is yes, you can make these as full sized muffins.

I like making mini muffins because I actually do end up eating less that way. I’ll have two mini muffins and that’s the perfect amount for me. In general, 3 to 4 mini muffins is equal to one regular-sized muffin, so you’ll eat more per sitting if you make these full sized.

If you’re thinking about Weight Watchers, one full-sized muffin would be nine points and that’s a lot of points to either start or end the day with (depending on if you are having one for breakfast or dessert).

If you choose to make these full-sized muffins, you’ll end up getting around 17 (or a dozen and a half-ish) out of them, which is a good amount. You also will have to bake them longer since there’s more batter per muffin. Check them around 17 minutes and then decide if they need more time or not.

What about as a cake?

I’ve never used this three-ingredient method to make a cake. I know, that’s silly considering this uses cake mix. But when I do bake a cake with cake mix, I follow the instructions on the back of the box (adding egg, oil, etc.).

But you know what? Go ahead and try it. There’s enough batter in this Pumpkin Spice Muffins recipe to stretch it out over a full 9×13-inch cake pan.

Since I haven’t ever done this myself (although now, I’m curious to try it), I’m not sure what the cooking time would be for this if you made it into a standard cake.

I’m also not sure if it would be fluffy like a cake or if it would be pretty dense. In general, the Weight Watchers Muffins we make are light and airy, but these Pumpkin Spice Weight Watchers Muffins are dense because of the can of pumpkin. So your cake might be pretty dense.

What is pumpkin spice?

So, I brought it up above, but I figured I would go into pumpkin spice in more detail here.

So pumpkin spice — like a pumpkin spice latte — does not have any pumpkin in it. Your PSL isn’t a pumpkin latte. It’s a latte made with the spices that would go into a pumpkin pie.

Originally, it was called “Pumpkin Pie Spice,” but that sounds bulky, so it was shortened to “Pumpkin Spice” — and caused a lot of confusion.

Pumpkin Spice is, generally, a combination of ground cinnamon, ground closed, and ground nutmeg. Many at home recipes also call for ground ginger, although that’s not required.

You can add pumpkin spice into any pies, like apple pie. Or coffee.

We’re getting a little off track here, but while I have your attention. If you put a tablespoon of pumpkin spice into your mug, then pour 8 oz. of coffee on top of it, and stir, you have a really quick pumpkin spice coffee.

That’s not a pumpkin spice latte because a latte requires steamed milk and milk foam. Plus, a latte is made with espresso, not regular coffee. But, in a pinch, to sooth your pumpkin spice cravings, this is a good go to.

And, just to try and bring this full circle somehow. If you brew a cup (8 oz.) of coffee, you can actually substitute coffee for the water in this recipe. I personally haven’t done it, but I’ve heard it doesn’t add a coffee flavor to the cake. Instead, it gives the cake a richer flavor.

If you want to try it, but don’t want to full commit to it, you can use 4 oz. of water and 4 oz. of coffee in this Pumpkin Spice Weight Watchers Muffins recipe.

Then, add a half of a tablespoon of pumpkin spice to that extra 4 oz. of coffee and call it a day.

Not that it is better but is healthier for me....I use this recipe plus 1 medium peeled and grated with a hand cheese grater and one carrot grated also. Just fold the apple and carrot into the batter. Get 18 muffins. When making for grandkids I add butterscotch chips then send the rest home with them.
