​A cobbler is a great dessert, but it’s a lot of work. But not this one. Our Peach Cobbler with fresh peaches and cake mix recipe is such an easy recipe for the most delicious cobbler.

​During peach season, I will make everything peach that I can. Peach hand pies, peach lemonade, peach pizza. You name it, I’m making it.

​So of course, I have to make a peach cobbler.

But, I cheat a little bit. Because usually, you have to make your own cobbler topping from flour, sugar, and a few other ingredients. You can skip all that and make peach cobbler my way: by using cake mix for your crumble topping.

​But, you also need my hack. In order to get that crispy crumble topping, you can’t just pour the cake mix on top. No. That will give you a cake-like topping. Instead, you need to freeze the butter and grate it into the cake mix. That will give you the topping you’re looking for.

And I promise you, anyone who eats your cobbler will be none the wiser.

Last time I made this for a potluck at our clubhouse, someone told me it tasted just like the peach cobbler her mother used to make. Someone else told me, “This is the best peach cobbler I’ve ever eaten in my life … and I’ve eaten a lot of peach cobbler.”

How To Make Peach Cobbler With Fresh Peaches And Cake Mix:

Preheat the oven to 350 F.

Pour the box of cake mix into a large bowl.

Grate in the frozen butter.

Stir the butter in until it’s really evenly dispersed.

You really want to make sure that the butter isn’t clumpy and gets spread throughout the cake mix. If not, when it bakes, there won’t be any moisture in that area and you’ll end up with dry spots on top of the cobbler.

Put the entire bowl in the freezer while you work on the rest of the recipe.

Slice the peaches.

The best way to do this is to cut the peach in half, then remove the pit. Cut each half into about a dozen slices.

Continue until you’re done with all the peaches and put the peach slices in a large bowl.

Stir.

Let the peaches sit and marinate for five minutes.

Add the salt, stir, and let the peaches sit another five minutes.

Pour the peach mixture, plus any peach juice in the bowl, into a greased 8.5- x 11-inch casserole dish.

Take the cake mix out of the freezer and the cake mix mixture, by hand, over the peach slices, making sure to crumble it in your hand as you drop it.

Bake for an hour until the cobbler topping is golden brown.

Let the peach cobbler cool at least 15 minutes before serving. You could serve it warm with a scoop of ice cream on top or cooled as is. Either way is delicious.

Peach Cobbler With Fresh Peaches And Cake Mix: Frequently Asked Questions

Can you make this with frozen peaches?

If it’s not peach season, you can substitute frozen peaches in this recipe. Make sure to complete defrost them, then follow the recipe as is. You only want the peach slices, not any peach juice that might come from defrosting the peaches.

Can you make this with canned peaches?

I will use any excuse to use fresh ripe peaches in a recipe. They’re so much better than canned. And less sweet. Canned peaches are usually packed in a light syrup or with added juice and that makes them sweeter than fresh fruit.

So, I don’t recommend them in this recipe because they’ll be too sweet and it will really throw off the balance of this dessert.

Can you make this with peach pie filling?

Peach pie filling comes packed with sugar and seasoning already, which seems like it would make this easy dessert recipe even easier.

But, the peaches in that canned filling are cut into chunks and part of the appeal of this peach cobbler are those long peach slices. So canned filling will change the texture of this recipe too much.

​Can you use a different flavor of cake mix?

So, usually when you make a traditional cobbler, the topping is made from flour, butter, sugar, baking powder, and baking soda. None of that is flavored. So, in order to make this cake mix cobbler taste like a traditional peach cobbler, you want to stick with a yellow cake mix. That’s the plainest of all the cake mixes.

But, with that being said, this is your dessert. So if you would rather try it with a lemon or spice cake mix, go right ahead. Be creative.

What brand of boxed mix works best?

Any brand that fits in your budget will work for this recipe. Personally, I use Betty Crocker more often than not because it’s always on sale, but any brand will work.

What if you don’t have a casserole dish?

I really like baking this in a casserole dish for a few reasons. First, a casserole pan has really high sides so it will hold all of the ingredients. Second, the casserole pan itself holds the temperature, which helps the entire cobbler bake evenly without needing to use a bake even strip.

If you don’t have a casserole pan, you can bake this in a baking dish or a Dutch oven. Just keep in mind that baking it in a different vessel may change the cooking time.

How can you store leftover peach cobbler?

Store any leftover peach cobbler in an airtight container in the refrigerator. It will be good for five to seven days that way (if it lasts that long).

  • 4 fresh peaches (about 5.5 cups)
  • 1/4 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons vanilla
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt

Instructions
