Last month, my mom and I went to the Sandhills region on North Carolina for Peach Week, a week when various local restaurants and establishments host peach themed activities, serve peach themed foods, and more.
We were on a Peach Week Food Tour when we went into Pizzeria Grazia in Aberdeen, NC, a peach week participant, to try its Just Peachy pizza.
The pizza sounds wild. Goat cheese, maple syrup, granola, fresh peaches, and blueberries. Our taste buds were kind of unsure about it, if I’m being honest. And this was our first bite on the food tour, so we really were setting the tone with a mystery.
You guys. It was so good. Pizzeria Grazia knocked it out of the park. It was a delicious treat, although we did sort of think of it as a dessert pizza more than a savory pizza.
When we got home, I knew I had to recreate it for my dad and Pete to try too. Pete kept jokingly calling it a flatbread rather than a pizza because there was no tomato sauce or mozzarella cheese and flatbread pizzas have more creative toppings. But, whatever you call it, it’s a delicious way to use those summer peaches that are in grocery stores right now.
Also, quick note: This recipe uses store-bought pizza dough. You can make your own homemade dough if you want, but I wanted to simplify this recipe by using pre-made dough.

Peach, Blueberry And Goat Cheese Pizza Recipe

Peach, Blueberry And Goat Cheese Pizza Ingredients:
- 8 oz. store-bought pizza dough
- 1 tablespoon of olive oil
- 3 oz. plain goat cheese
- 1/2 cup fresh blueberries
- 1/2 fresh peach
- 2 tablespoons honey granola
- 2 tablespoons maple syrup
How To Make A Peach, Blueberry And Goat Cheese Pizza:
Pre-heat the oven to 425 F.
Cover the dough in a little bit of olive oil and put it in a large bowl. Let it rest and come to room temperature for at least 15 minutes.
Put a little cornmeal on a pizza peel.
Put the dough ball on the pizza peel and shape it into a circle.
Now, I’ll be honest here. I could tell you how I stretch and shape the dough, but this Instagram video explains it so much better than I can. So definitely check that out if you’ve never rolled out pizza dough before.
Transfer the dough to a pizza stone and bake for 10 minutes until the crust is golden brown.
Use the pizza peel to take the crust out of the oven.
Brush the olive oil on top using a pastry brush.
Spread a thin layer of goat cheese on top.
Since you’re doing this on warm pizza crust, the creamy goat cheese will easily warm and spread around.
Add the blueberries on top.
Slice the peach into thin slices and add the peach slices on top.
Quick note: When you slice peaches for this pizza, you want to slice them pretty thin. The thinner they are, the more caramelized they’ll get.
Bake on the pizza peel for an additional three minutes until the blueberries and peaches are warmed through.
Remove the pizza from the oven.
Sprinkle the granola on top.
Add a drizzle of the maple syrup.
Let the pizza rest a couple minutes before cutting and serving.
Peach, Blueberry And Goat Cheese Pizza: Frequently Asked Questions
If you want, you could add some fresh herbs, like fresh basil to this. Arugula would be great and would really balance the sweetness of the peaches. We didn’t add that because we really wanted to recreate the pizza we had at Pizzeria Grazia, and that didn’t have any greens on top.
However, you can experiment and add whatever you want to turn this into your perfect summer pizza.
You can find pizza dough in the refrigerated section in your grocery store, near where the refrigerated, prepared pizzas are.
The dough that I buy comes in 16 oz. packages, so I cut it in half before putting it in two bowls. I’ll use one to make this peach pizza recipe and the other to make a more traditional pizza.
Wait until the pizza has cooled to room temperature, then store it in an airtight container in the fridge. It’ll last about five days that way.
The best way to reheat leftover pizza is in the air fryer. Set it to 360 F for about four minutes until the toppings are warmed.
We put raw fruit on this pizza. You don’t need the extra steps of making grilled peaches or warmed blueberries. They’ll heat enough in the oven.
If you want to, by all means, you can heat the peach slices on a cookie sheet alongside the pizza crust while it warms, then top the pizza with that. But, it’s not necessary.
It’s so much easier to move raw pizza dough onto a pizza stone using a pizza peel than anything else. If you don’t have one, you could use a cutting board as your work surface instead. But, if you’re going to make pizza on a regular basis, definitely invest in a pizza peel.
Most pizza shops bake their pizza in ovens that go up to 1,000 degrees. There’s no way you can get that heat in a home oven.
However, a pizza stone gets warmer than a cookie sheet would. So, if you bake pizza on a pizza stone, you get a much better crunch and char on the crust than you do from baking it another way.

I love trying different pizza toppings - during Covid a small group of us met every Saturday the 2 years and each week we each brought a different pizza topping to try. This one we haven't tried yet - it's on my to make list now!

I've only recently trying "sweet" things on my pizza and I really it! We had an arugula, feta, and fig jam pizza not too long ago that was amazing. I bet this one is really good too-- especially with fresh fruits (both of which are in season here this time of year).
