A long time ago, I ran a webzine. I had my friends write articles for it, and I even found writers on freelance sites. It was a really cool endeavor. As part of it, my friend wrote a recipe for potato rounds. The appetizer popped into my head recently, but since the webzine is long gone, I couldn’t find the recipe. So, I had to create one from memory for Parmesan Potato Rounds.

These are so good. They’re something you make for a party and then eat a bunch of while you’re waiting for company to arrive.

Slice them all, thinly, and put them in a large bowl.

Cover the potatoes with water and add an optional pinch of sugar. I always add this because someone told me it makes potatoes crispier although I honestly never see a difference.

After two hours or so (that’s long enough to get out all the starch), drain the potatoes and dry them completely using towels.

Put the dried potatoes in a ziptop plastic bag. Drizzle the olive oil on top. Shake the potatoes.

Add the parmesan, salt, and pepper to the bag. Shake them around until the potatoes are completely coated.

Spread the potatoes on a cookie sheet. Bake for about 30 minutes until the rounds start to brown and get crispy.

Serve with a sour cream dip.

Ingredients

  • Six potatoes
  • 2 tablespoons olive oil
  • 1/2 cup parmesan cheese
  • 1 tablespoon salt
  • 1/2 teaspoon white ground pepper

Instructions

Notes

Soaking the potatoes in sugar water pulls out the starch and results in a crispier potato.
