Cucumber Hummus Bites Recipe

Whenever we host a pot luck, I make sure to make something with fresh vegetables. It could be a salad or tzatziki with vegetables, but it’s something. During the summer, when we have an abundance of cucumbers, it’s something with cucumber.

If your garden grows like ours, this Cucumber Hummus Bites recipe is for you. This easy recipe is a great way to use up those cucumbers. Plus, the appetizer comes together so quickly with simple ingredients that you might already have at home.

We use store bought hummus in this because, well, it means this appetizer only takes minutes to make. And sometimes, minutes is all you have.

But, feel free to use your homemade hummus in this, if you’d prefer. I suggest adding dill to your hummus because dill goes so well with cucumbers. That’s why we use a dill hummus in this but really, you can’t go wrong with a classic hummus either.

Cucumber Hummus Bites Ingredients:

  • Cucumber – Regular cucumbers work better than English cucumbers because they’re bigger so they hold more of the toppings.
  • Salt
  • Garlic dill hummus – We buy this variant at ALDI. If you can’t find it, any brand/flavor works.
  • Fresh parsley – Fresh is best. Dried herbs don’t work in this recipe.
  • Cherry tomatoes – If you can’t find cherry tomatoes, you can substitute grape tomatoes. They’re a little bigger, so you might only fit two slices instead of three on each cucumber slice though.
  • Feta cheese crumbles – Plain feta goes with the seasoned hummus best. If you use a plain hummus, you can use a seasoned feta.

How To Make Cucumber Hummus Bites:

Slice the cucumber into thin slices, about a quarter-inch thick.

I use a sharp knife for this, but if you have a mandoline slicer, you can use that.

Put the slices on a serving tray. Sprinkle the salt on each slice of cucumber.

Quick note: If you have time, let the cucumber slices sit for about 30 minutes so the salt pulls out some of the moisture. This is super helpful if you’re making these for a party where they’ll be sitting out a while. If you don’t have time or you’re eating these right away, you can skip this.

Blot the excess water off with a paper towel.

Spoon some of the dill hummus in the center of each cucumber slice. Use the back of the spoon to spread it into a thin layer, leaving a small border around the outside (for aesthetics, mostly).

Chop the parsley.

Channel your inner salt bae and sprinkle the parsley on top.

Slice the cherry tomatoes.

Add a couple slices on top of the cucumbers.

Sprinkle the feta cheese crumbs across the top, breaking any large crumbs into small pieces as you do.

You can serve these and let them sit at room temperature for a little bit. However, if you’re not going to eat them right away, we suggest storing them in the fridge because of the cheese.

Cucumber Hummus Bites: Frequently Asked Questions

How do you store leftovers?

Store any leftover cucumber hummus bites in an airtight container in the fridge. I stack them on top of each other in a round container (like what Chinese food soup comes in) and that works for me. They’ll be good for about two days that way.

The cucumber at the bottom will get a little soggy because of all the moisture leaving the cucumbers and accumulating at the bottom of the container, but the rest will be nice crisp cucumbers.

Do you need to peel the cucumbers?

I don’t peel the cucumbers when I use them as appetizers. The green ring around the cucumber just gives them such a nice color.

Many people comment that cucumber has a thicker skin than other vegetables and should be peeled, but I don’t agree with that.

Can you use English cucumbers?

English cucumbers, the ones that come wrapped in plastic, give you really crisp cucumber slices when you cut them. That’s great.

However, those slices (although they are a perfect round shape and they’re all pretty much uniform) are so small, so you don’t get as much satisfaction out of eating one as you do with the regular, large cucumbers you buy in your grocery store. So, if you’re making these for your next party, you’ll need to make so many from a long, thin English cucumber to fill your serving tray, and it will just be more time consuming and you won’t love this recipe and it won’t become your new favorite. And that would be really sad.

So stick with the traditional cucumbers. Trust me.

Can you use zucchini instead?

If you don’t like cucumbers, or if you have a ton of zucchini in your garden instead of cucumbers, you can use that as the base of this delicious appetizer instead. It just, well, wouldn’t be considered a cucumber appetizer since you’re not using cucumbers.

Can you use a different type of hummus?

I mentioned this above, but you can use any hummus in this. I use dill hummus because dill weed goes really well with cucumbers, but you can use your favorite hummus, whatever that is.

Can you make these vegan?

I made these for our July 4th party, where one of our friends who is vegan is coming. So, I didn’t add the feta cheese to some of them.

She told me that you can actually buy vegan feta cheese at Whole Foods, which is very good. So, you can make these either without feta or with vegan feta.

Can you turn this appetizer into a main meal?

This is definitely an appetizer. However, if you have leftovers and don’t want to just eat this as is, you could throw the leftover cucumber bites into a piece of pita bread for a Mediterranean cucumber sandwich. A little schmear of tzatziki or fresh yogurt dip on the inside of the pita would be really good to add so this isn’t so dry as a sandwich.
