I love eggplant parmesan. I don’t love making it though. It’s so much work to slice the eggplant, bread it, fry it, then bake it. By the time it’s ready, I’m so tired of the eggplant that I don’t even want to eat it anymore. So I had to simplify it and make breaded eggplant bites.
It’s all the taste of baked eggplant parmesan, but without the work or the calories.
Okay, it’s also without the mozzarella cheese. I know, I know. Mozzarella cheese makes everything better. But you won’t miss it in this. I promise.
The eggplant is really substantial, so you won’t miss any meat when you’re eating this meal. And that’s important when you’re eating vegetables. You want them to have taste and to be filling. If they’re bland, you won’t eat them. And if they don’t fill you up, you won’t eat them.
And you need to eat them. We could all use a few more veggies in our lives, even the some of us who eat plant-based meals four nights a week.

Breaded Eggplant Parmesan Bites Recipe

Breaded Eggplant Parmesan Bites Ingredients:
- 1 large eggplant
- 4 eggs
- 1.5 cup Panko bread crumbs
- 2 teaspoons Italian seasoning
- 3 garlic cloves, chopped
- 1/2 cup grated Parmesan cheese
How To Make Breaded Eggplant Parmesan Bites:
Pre-heat your oven to 350 F.
Peel and chop your eggplant into small bites.
Beat the eggs.
Drop the eggplant bites into the egg and coat them completely.
Mix together your bread crumbs, seasoning, and garlic.
Coat the eggplant bites in the seasoning mixture.
Spread the eggplants on to a foil-lined cookie sheet.
Sprinkle them with Parmesan cheese. Bake until the bites are fork-tender, about 40 minutes.
Pour your favorite marinara sauce into a bowl and scoop the eggplant bites on top. Serve warm.
These baked eggplant bites would even make a really good party appetizer. You could bring them to someone’s house warm with a jar of your favorite marinara. Then, just poke toothpicks into the eggplant parmesan bites, pour the marinara into a shallow bowl, and serve that way.
