I probably should stop eating sweets. I caught a bad head cold for two weeks, and during that entire time, my body was basically 80% cold medicine and 20% chocolate. Whatever my body wanted to eat, I let it. Any calories are good calories, I figured.

That’s how I ended up having sour cream and cheddar potato chips for lunch one day. So I should curb the junk food … right after I finish this batch of Unicorn Poop Meringue Cookies.

You need to make these, mostly because it’s pretty fun to say you’re serving unicorn poop for dessert. Or bringing poop to a pot luck.

You should also make them because they taste amazing. I think they’re like a crunchy marshmallow; Pete says they taste like cotton candy.

They’re a little time consuming because you need to individually pipe each cookie, and then they bake for 40 minutes followed by an hour of just sitting in an oven. But they’re easy. Anyone of an skill level can make these. And you’ll impress your friends who are still intimidated.

How To Make Unicorn Poop Meringue Cookies Recipe:

Pre-heat the oven to 250 F.

Separate the egg.

Put the whites into a stand mixer and put the yolks to the side (you won’t need the yolks for this, but definitely save them for breakfast).

Add the salt, cream of tartar, and vanilla. Beat on high for 2 minutes until the eggs are foamy.

Add in the sugar and beat on high for 10 minutes until stiff peaks form.

The stiffer the peaks, the more meringues you’ll get out of the batter.

Prepare your piping bag. Now, for this I used a 2A tip, which is larger than a standard tip and doesn’t fit onto a standard coupler. But, if you try to pipe without a coupler, there’s a 100% chance the tip won’t stay and you’ll make a huge mess.

So, here’s my tip.

Put the long side of the coupler into the piping bag. Wrap the outside with double sided tape. Then, put the tip on the outside of the bag. The double sided tape is so sticky, you’ll get through the entire batch without it budging.

So once the tip is on, cut the end of the piping bag to make a hole, and you’re ready to go.

Fill the piping bag with a spoonful of the meringue mixture, then pipe it onto a silicone baking mat-lined cookie sheet. I piped a circle, then a smaller circle, then half a circle (in one motion) to form the poop shape.

When they’re all piped, sprinkle the rainbow sprinkles on top.

Bake for 40 minutes.

After 40 minutes, turn the oven off and let them sit inside for an hour. This will help them firm into a stiff, airy bite. If you open the oven too soon, you’ll end up with chewy meringue cookies that don’t taste right.

Ingredients

  • 3 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons vanilla
  • 2/3 cups sugar
  • Rainbow sprinkles

Instructions

Notes
