In our guest bathroom, I keep a bunch of magazines. They’re usually old, but to our guests they’re new. Once, when my mom was visiting, she was flipping through one and found an oatmeal pancakes recipe that she wanted to try.
See, oatmeal is really great and healthy, but it isn’t something that you can take with you on the go. She figured the pancake was a great grab-and-go breakfast — and a lot better than a flour-based pancake. She actually did end up making these, then grabbing them when we were going out for the day.
You don’t use a pre-made pancake mix for this recipe, but it is a pretty easy anyway.
Also, these are flourless oatmeal pancakes, so that’s good if you need to avoid that.
