I love salad. It’s such a good dinner for when you don’t want anything heavy but you want something delicious.
Okay, I know. Some people think of salad as a boring side that just fills your vegetable quota. But hear me out. Dinner salads are a fantastic idea.
I actually serve salad for dinner at least once a week.
Pete prefers if there’s meat of some sort in the salad, so some of these have meat, but we do sometimes just skip that all together.

Peach And Arugula Salad With Burrata And Prosciutto
If you’re looking for a salad that feels like it should be served in a fancy restaurant, not in your own kitchen, this Peach And Arugula Salad With Burrata And Prosciutto is it.
Soft stracciatella cheese and prosciutto pieces are placed on top of marinated peaches, which are all on a bed of arugula, the perfect spicy base to counter the sweet peaches.

Grilled Caesar Salad
This Grilled Caesar Salad is such a fun twist on a traditional Caesar Salad because yes, you actually do grill the romaine lettuce. The result is a charred, crisp lettuce that’s so good. It’s super easy to eat the entire serving.
What’s fun about this delicious salad is you actually grill bread to make homemade croutons for the salad too (which is a lot easier than it sounds).

Maroulosalata (Greek Lettuce Salad) With Olives
There’s so much green in this Greek Lettuce Salad: romaine lettuce, green onions, and dill. You make your own homemade dressing from a simple recipe of olive oil, lemon juice, and seasoning that gets poured on top.
A traditional Maroulosalata doesn’t have kalamata olives in it, but we add them for a little extra flavor.

Bacon And Bleu Cheese Salad
One of our favorite salads is this Bacon And Bleu Cheese Salad. Romaine lettuce is topped with crispy bacon, bleu cheese crumbles, bleu cheese dressing, and a pinch of salt to bring out all the flavors.
If you have extra bacon already cooked, this simple salad comes together so quickly.

7 Layer Salad
This 7 Layer Salad is my favorite side dish salad. I only make it for special occasions because it’s a little too much work for a weeknight meal.
The salad is layered iceberg lettuce, celery, green bell pepper, onion, frozen peas, cooked bacon, cheddar cheese, and then a a homemade dressing. It sits for 12 to 24 hours for the flavors to combine and for the peas to defrost.

Red, White, And Bleu Kale Salad
We originally made this Red, White, And Bleu Kale Salad for a patriotic party — hence the colors. It’s a great addition to your Memorial Day or July 4th party spread. But, you can serve it anytime.
Hearty kale is the base (although any leafy greens would work). Berries and crunchy croutons are added, then drizzled with a bottled dressing. This summer salad is best when berries are in season.
