S’mores are the quintessential summer treat. Sitting around a campfire, roasting marshmallows, telling ghost stories, eating s’mores so quickly so the melting chocolate doesn’t fall all down your chin.
It’s perfect.
But sometimes you want the taste of s’mores but less of the mess. And no fire. Because fire is fun when you’re camping, but maybe you don’t have a firepit at home.
That’s where our No Bake S’mores Cookies With Marshmallow Fluff come in. These cookies have the flavors of s’mores, but in an easy to make cookie form.
You can make a couple of them for dessert or a bunch of them for a potluck. Or a bunch of them for you. You’re a grown up. Enjoy your life.

No Bake S’mores Cookies With Marshmallow Fluff Ingredients:

- Graham crackers — Any brand works. I prefer the honey graham crackers over the cinnamon because that’s more traditional, but you can choose whatever you prefer.
- Marshmallow Fluff — We always use the name brand for this.
- Chocolate almond bark — This melts easier than chocolate chips. And, if you dip slowly and your almond bark hardens, you can remelt it.
How To Make No Bake S’mores Cookies With Marshmallow Fluff:

Break your graham crackers into individual pieces.
Set them out on a silicone baking-mat lined cookie sheet.
Quick note: You don’t have to do this, but I lay them all down flat side up. That way, when you make these, the prettier side is showing. Do you need to do this? No. Do I need to do this because I’m extra? Yes.

Smear a little Marshmallow Fluff on one of the graham cracker pieces.
You don’t need to measure this with a spoon. Just measure with your heart.
But also, try to keep it around 1/4 of a teaspoon or less. When you add too much, it’ll ooze out the sides and just make a big mess. So yes, Fluff is great, but less is more in this cookie.

Place a second graham cracker piece on top.
Be careful not to squish down because that will make a mess.
Also, because I’m me, I make sure to lay the flat side of the graham cracker onto the Fluff so that the rounded, prettier side is showing on both sides. You don’t have to do this, but it looks nicer if you do.
Continue until you’ve made all the cookies you want to make.

Melt the chocolate almond bark in a microwave safe bowl.
Melt it according to the package, but quick tip: Chop the almond bark into pieces, then microwave them in a small bowl for one minute. Stir. If they’re not completely melted, add them back and stir in 30 second intervals. Continue until it’s completely melted.

Gently dip half of the cookie into the melted chocolate almond bark.
Set the cookie back into the silicone baking mat.
Quick note: If you don’t have a silicone baking mat, you can like the baking sheet with parchment paper. If you don’t line it with something, the chocolate will stick to the metal pan and the cookies will be almost impossible to remove once they’ve cooled.
Personally, I prefer to use a silicone baking mat because it’s reusable. So it’s more frugal and environmentally friendly than parchment paper.

Crumble a piece of graham cracker into the warm chocolate on the cookie.
Quick note: It’s honestly easy enough to crumble a piece of graham cracker between two of your fingers and sprinkle it on top of the melted chocolate.
However, if you’re making these with kids and want to make it just a little bit easier for them, I would put some graham crackers into a ziptop bag and either break them apart with your fingers or by gently rolling a rolling pin on top. Then, have the kids grab a pinch of the graham cracker crumbles and spread that on top.

Continue until you’ve made all the cookies you want.
Let the chocolate cool completely before removing the cookies from the silicone baking mat.

Open graham crackers last for about a week or two opened and stored properly before they start to lose their crunch.
So, in theory you could make these a week ahead of time and they’ll stay fresh as long as you store them in an airtight container at room temperature. You can store them in the fridge if you want (Marshmallow Fluff is able to go in the fridge), but I just store them on a kitchen counter.
Personally, I make them the night before always and they’re great the next day.
Traditionally, s’mores are three ingredients: chocolate, marshmallow, and graham crackers. So, you could use something other than graham crackers, but I wouldn’t consider them s’mores cookies.
However, be creative. These are your dessert. So try Ritz crackers or vanilla wafers. Or maybe even Keebler Fudge Rounds.
