Lately, we’ve been having Vegan Fridays. It’s not becoming a thing for real, but the last two weeks, it has been. Since it’s Lent, I can’t have meat on Fridays. Usually that means grabbing a pizza or making spaghetti, but I’ve really wanted to use it as a way to experiment with different dinners. So this week, it was Lentil And Cauliflower Vegan Tacos.
Don’t let the vegan part throw you off.
I used to let it really intimidate me. It’s super restrictive, and I always thought I would need some strange ingredients to make a vegan meal. You don’t.
Sometimes, sure, some vegan recipes will use things like vegan cheese. Any non-vegan isn’t going to have that in the fridge. Or vegan meat crumbles. Which is silly to me because that’s usually soy or something else plant-based that tastes like meat. If I’m going to make something vegan or vegetarian, I’m not trying to make it taste like meat. But that’s me.

Lentil And Cauliflower Vegan Tacos Recipe

Lentil And Cauliflower Vegan Tacos Ingredients:
- 1/2 cup lentils
- 1.5 cups water
- 1 onion, diced
- 12 oz. frozen cauliflower, thawed
- 5 cloves of garlic
- 1 tablespoon chili powder
- 1/4 teaspoon cumin
- 1 tablespoon Cajun seasoning
- 1 tablespoon salt
- 1/4 tablespoon pepper
- 1 avocado
- 1/2 teaspoon lemon juice
- 20 fajita-sized flour tortillas
- Fresh spinach
- 1 tomato
How To Make Lentil And Cauliflower Vegan Tacos:
Soak the lentils overnight. Trust me. You need to do this. I’ve skipped this part and the lentils have come out so “Earthy” tasting. Like they taste like dirt and are hard to eat. So, if you decide you don’t like lentils, I bet it’s because you also thought you didn’t have to soak them overnight.
Drain and rinse the lentils.
Put the lentils, water, and salt in a sauce pan. Bring the water to a boil, then cover, lower the heat, and simmer for 20 minutes (until the water is completely absorbed).
In a separate pan, add the onion and sauté until the onion is translucent, about 10 minutes. You don’t want to caramelize the onion, so don’t use oil. Instead, just add 1/4 cup of water to help sweat the onions. Add a little more if the onions start getting stuck.
While that’s cooking, dice the cauliflower.
Add the cauliflower and chopped garlic to the pan with the onion. Add the seasoning. Cook until the cauliflower is soft, about 10 minutes.
Add the lentils to the pan. Stir until everything is combined.
Mash the avocado in a small bowl with the lemon juice.
Spread a thin layer of avocado on a tortilla. Top with the lentil and cauliflower mix, then top with spinach and tomatoes.

Wow... those seem pretty easy to make! I'm impressed. My vegan tacos are usually just caramelized onions and sauteed peppers in a shell lol... doesn't sound good but it is SO flavorful... I swear my life changed forever when I met a properly caramelized onion lol
