‘Tis the season for guests. I love it. I love having a house full of visitors to celebrate the holidays with.
This past week, we went to Florida for Christmas break and stayed overnight at my brother’s house.
The next morning, he cooked a huge spread of breakfast foods: scrambled eggs, bacon, cinnamon rolls, a fruit platter, and of course, coffee.
When we went back to my parents house to spend the rest of the week, I wanted to make breakfast for all of us.
But, when I’m cooking for a group, I don’t do the kind of spread my brother did because it’s really time-consuming. I would rather make a breakfast casserole where you put everything in one pan and it all cooks together.
That’s why I love this Hawaiian rolls breakfast casserole.
I also really like it because Hawaiian rolls are on sale everywhere at this time of year so you may be buying some too use for Christmas and have leftovers for this breakfast recipe.

If you found this recipe because you love breakfast casseroles, definitely try our Overnight French Toast Casserole.
I really like it for guests as well because you can assemble it the night before and then bake it in the morning.

Hawaiian Roll Breakfast Casserole Ingredients:
You can get the full list of ingredients with measurements in the recipe card below.
- Hawaiian rolls – The sweet Hawaiian rolls add a nice balance to the savory ingredients.
- Bacon – This is a great way to use leftover bacon.
- Cheese – If you have leftover cheese from another party recipe, this is a great way to use it up. We use leftover Gouda, pepper jack, and cheddar from a charcuterie board to make this.
- Eggs – Large white eggs are fine.
- Heavy cream – Heavy cream is thicker and a little more indulgent than milk, so it adds a sweetness and also makes this feel more luxurious. You could use whole milk if you can’t find heavy cream.
- Maple syrup – This adds a little sweetness to the casserole and makes it feel more breakfast-y because lots of breakfast foods have maple syrup.
- Salt – A little salt brings out all of the flavors in the egg mixture.
How To Make Hawaiian Roll Breakfast Casserole:
Pre-heat the oven to 350 F.

Cut the Hawaiian rolls into cubes.
I cut them into eight cubes per roll, but you don’t need to be that exact.
When this bakes, the Hawaiian roll pieces sort of push together. It’s not like pull apart bread where you’re eating each cube individually. So, you want to cut the Hawaiian rolls, but the size is really irrelevant.
Place the cubes of Hawaiian bread in the bottom of a 9- x 13-inch baking pan.

Cook the bacon and let it cool.
It doesn’t need to cool completely but you want it to be cool to the touch.
Cut the bacon into small pieces.
Spread them across the top of the Hawaiian roll cubes in the pan.
You want the bacon to be as evenly distributed as possible.

Cut the cheese into pieces that are the same size as the bacon.
We made a charcuterie board for some company at Christmas time, then used the leftover cheese for this recipe. You can use whatever your family likes best.
Spread the cheese pieces on top of the Hawaiian roll cubes.

Crack the eggs into a large mixing bowl.
Add in the heavy cream.
Quick note: You can use whole milk instead of heavy cream. It’ll going to make your egg mixture a little lighter and less flavorful, though.

Add in the maple syrup.
The maple syrup add so much flavor to the breakfast casserole. You’re not adding that much but it really makes this taste breakfast-y, so, don’t skip it.

Add in the salt.
We used pepper jack cheese in our blend, which added a nice flavor. If you’re not adding a spicy cheese, you may want add just a dash of pepper into your egg mixture to give it more flavor.
Whisk the egg mixture together using a fork until all of the ingredients are combined.

Slowly pour the egg mixture over the ingredients in the baking pan.
You want to make sure that you’re evenly distributing the egg mixture so all of the Hawaiian roll pieces absorb some of the egg.
If you’re not being conscious of this, you’ll end up with dry bread pieces that will burn while you’re baking.

Cover the entire tray with foil.
Bake for 40 minutes.
Remove the foil and bake for an additional 10 to 15 minutes until the egg on top is cooked through and the Hawaiian rolls are golden brown.
If you don’t tent the pan in foil first, there’s a good chance the Hawaiian rolls will burn before the eggs are cooked through.

Let the breakfast casserole cool slightly before cutting it into servings.
The bread at the bottom is really soft when it comes out of the oven so you just wanna give it a couple minutes to firm up to make it easier to serve.
You can serve this with a drizzle of maple syrup on top. We don’t because I think it’s sweet enough, but I do put the container out for guests to have that option.

Hawaiian Roll Breakfast Casserole: Frequently Asked Questions
If you want, you can also use breakfast sausage in this recipe. Look for a maple-flavored ground breakfast sausage to match the maple syrup in the egg mixture.
You could use breakfast sausage logs if you wanted and cut them into a small pieces before adding it to the tray, similar to how you cut the bacon.
Any other breakfast type of meat, like Canadian ham, would work too.
Store any leftover breakfast casserole in an airtight container in the fridge. It will last around four days that way.
To reheat it, just put it on a microwave safe plate and microwave it on high for 45 to 60 seconds, depending on how hot you like your food.
