My first job after college was at a newspaper that had a full service cafeteria downstairs.

Bacon & Jalapeño Pimento Grilled Cheese Sandwich
The first time I had pimento cheese as a condiment was from a food truck serving hamburgers. It was such a unique way to make a cheeseburger without the traditional sliced cheese.
So of course, I had to try grilled cheese with it. It’s. So. Good. It adds a different texture and dynamic to the sandwich. And it’s such a good contrast to the crispy bacon in this bacon and jalapeño pimento grilled cheese sandwich.
