Grilled cheese is amazing.
As an adult, it seems like grilled cheese isn’t the best ideas for dinner. But, it is. It absolutely is. You just have to jazz it up a little bit, like this Bacon And Jalapeño Pimento Grilled Cheese.
It’s savory and creamy and has bacon. Bacon. Nothing’s wrong when it comes to bacon.
Bacon And Jalapeño Pimento Grilled Cheese Recipe

Bacon And Jalapeño Pimento Grilled Cheese Ingredients:
- 6 sliced of bacon
- 6 tablespoons jalapeño pimento cheese
- 4 sliced of sandwich bread
How To Make Bacon And Jalapeño Pimento Grilled Cheese:
Make the bacon in a skillet. Put it on a paper-towel covered plate to drain. Let the bacon cool.
Drain almost all of the bacon grease from the skillet. Leave a little behind to cook the sandwich in instead of using extra butter.
Put a slice of bread onto the skillet. Top with bacon.
Top a second slice of bread with a generous amount of jalapeño pimento cheese.
Side note: If you can’t find jalapeño pimento cheese, just pick up pimento cheese and jalapeños. Dice the jalapeño, stir it into the cheese, and you’re good to go.
Place the cheese side of the bread onto the bacon.
Cover the skillet until the cheese starts to melt and the bread is golden brown.
Flip the sandwich and grill on the other side until the bread is golden brown.
Serve warm.

I have kids on the autistic spectrum and I'm intrigued ... might have to read this, although it sounds like the ending is a bit disappointing. I kind of appreciate knowing that. And the sandwich sounds so good! I think I would call it a panini since you squished it from the top. :)
