I was in a coffee shop not too long ago and a tasty sandwich caught my eye: a chicken salad BLT sandwich. The sandwich was so tiny, though, and expensive for its size, plus I couldn’t be sure how fresh it actually was.

I passed on it and decided to buy all the ingredients to make this Chicken Salad BLT sandwich recipe at home.

I’m not even exaggerating when I say this was the best sandwich I’ve ever eaten. I’m planning on making it weekly; it was that good.

I mean, it’s chicken salad with bacon, lettuce, and tomato. How could you go wrong?

Cook the bacon slices.

When the bacon is done, drain the pan, leaving behind about two tablespoons of the bacon grease.

Add the diced chicken to the pan and cook until done, about five minutes.

Put the chicken in a bowl with the mayonnaise and combine. Put it in the fridge to cool.

Toast the bread.

Put the bacon and tomato on one side, then the lettuce on the other.

Put a heaping amount of the chicken/mayo mixture onto one of the slices. Close the sandwich and enjoy.

You can actually save the rest of the bacon grease in the fridge and use it instead of olive oil when you’re cooking in the future. I actually don’t do that because I forget about it every time. I always cook other components of the same meal in the bacon grease though, like this.

Ingredients

  • 4 chicken breast tenderloins, diced
  • 4 slices of bread
  • 1 cup mayonnaise
  • 4 slices of bacon
  • Lettuce
  • 1 Roma tomato, sliced

Instructions

    1. Cook the bacon slices.

    3. Put the chicken in a bowl with the mayonnaise and combine. Put it in the fridge to cool.
    4. Toast the bread.

    6. Put a heaping amount of the chicken/mayo mixture onto one of the slices. Close the sandwich and enjoy.
