We have a potluck at the clubhouse in our community twice a month. Most people bring desserts because the potluck starts at 7 pm, so a lot of people have eaten dinner and are looking for a sweet treat.

Goat Cheese Prosciutto Lingonberry Jam Bruschetta
Lingonberry jam is an unfamiliar ingredient for most people, but don’t let that stop you from making this Goat Cheese Prosciutto Lingonberry Jam Bruschetta. You can find lingonberry jelly at most grocery stores. I buy it at World Market.
It’s a more tart and less sweet jelly, which pairs perfectly with the tangy goat cheese and salty prosciutto to make a really unique and tasty bruschetta.

Avocado Toast Bruschetta
Avocado toast is so popular and once you’ve had it, you understand why. I’m not going to serve avocado toast at my parties (although I do make it for dinner) but I will serve this Avocado Toast Bruschetta.
Mashed avocado is spread between toasted bread and diced tomatoes for a really delicious quick appetizer.

Broccoli Rabe Bruschetta
When most people think of traditional bruschetta, they think of tomatoes. But bruschetta is really any toasted bread with toppings on top. So this broccoli rabe bruschetta, that I make for Pete for his birthday, counts.
Broccoli rabe is a bitter vegetable, so a lot of people don’t like it. But it’s perfectly balanced with the tangy goat cheese in this bruschetta, so it’s definitely worth adding to your appetizer rotation. Especially if you’re inviting Pete over for dinner.

Kale Pesto Bruschetta
I am obsessed with kale pesto. It has kale and walnuts as the base rather than pesto and pine nuts, so it has a more mild and less earthy flavor.
We use it as the base of this Kale Pesto Bruschetta that’s topped with diced tomatoes and sprinkled with a little bit of Parmesan cheese for a salty kick.

Spooky Bruschetta
If you’re hosting a Halloween party or a spooky movie night, you want to make this Spooky Bruschetta. I make it for Halloween and insist on everyone calling it boo-schetta because of the ghost.
It’s a wonder people still invite me places.
You cut ghost out of mozzarella cheese. Then, top toasted bread with a traditional bruschetta topping, a drizzle of balsamic glaze, and that mozzarella ghost.

Bruschetta Totchos
If you want something similar to traditional bruschetta, but also completely different, this Bruschetta Totchos recipe is for you.
It’s topped with tomatoes, basil, and mozzarella cheese, like you would expect to find in bruschetta, but the base is tater tots and not a piece of bread.
It’s definitely not traditional, but it is delicious.
