Sure, you could just eat them as is, but a salted hard boiled egg for breakfast gets boring quickly.

Deviled eggs start by hard boiling eggs, so, when you start with Easter eggs, you’re already done with the longest part of the recipe.

Hard Boiled Egg Toast

A really simple way to use up hard boiled eggs is to eat them on toast with a drizzle of olive oil, and add a little salt.

It’s a great recipe for Easter breakfast, when you’re trying to quickly get some food into your kids before they binge all the chocolate the Easter bunny brought them. You could also add some mashed avocados on the bottom and some crispy bacon on top for a little more flavor.

Leftover hard-boiled eggs last for about a week in the fridge, as long as you store them within two hours of them being cooked (or two hours after your egg hunt).

What’s the best way to store Easter eggs in the fridge?

Save whatever egg container they came in originally, then use that to store the eggs in the fridge.

Quick note: You’ll either want to store these in the body of the refrigerator or on the top part of the fridge door that has the covering over it. You don’t want to store them on a shelf in the door because that part is subject to frequent temperature changes from the fridge door opening and closing, and that can reduce the time the eggs will stay good.

Can I freeze hard boiled eggs?

Unfortunately, you cannot freeze hard boiled eggs, so you’ll only want to make as many as you can eat within a week.

Are leftover Easter eggs safe to eat cold?

Easter eggs are safe to eat cold, straight out of the fridge.

Can you eat dyed Easter eggs?

You absolutely can eat dyed Easter eggs, as long as you used food-safe dye to decorate them.

You don’t want to eat them if they’ve sat out at room temperature for longer than two hours or if they have a cracked shell.

I have NEVER thought of adding an egg to my tuna salad but I am definitely going to try that this week. We didn't dye eggs (we gave up that tradition a few years ago when my boys no longer wanted to) but we always have hard boiled eggs on hand.

I usually make egg salad or deviled eggs with the leftover Easter eggs. Don’t worry I only dye them and they are consumed quickly.
