I was in a coffee shop not too long ago and a tasty sandwich caught my eye: a chicken salad BLT. The sandwich was so tiny, though, and expensive for its size, plus I couldn’t be sure how fresh it actually was.

I passed up on it and decided to buy all the ingredients to make it at home.

I’m not even exaggerating when I say this was the best sandwich I’ve ever eaten. I’m planning on making it weekly; it was that good.

What You’ll Need:

  • 4 chicken breast tenderloins, diced
  • 4 slices of bread
  • 1 cup mayonnaise
  • 4 slices of bacon
  • Lettuce
  • 1 Roma tomato, sliced

Cook the bacon slices.

When it’s done, drain the pan, leaving behind about two tablespoons of the bacon grease. Add the diced chicken to the pan and cook until done, about five minutes.

Put the chicken in a bowl with the mayonnaise and combine. Put it in the fridge to cool.

Toast the bread.

Put the bacon and tomato on one side, then the lettuce on the other.

Put a heaping amount of the chicken/mayo mixture onto one of the slices. Close the sandwich and enjoy.

You can actually save the rest of the bacon grease in the fridge and use it instead of olive oil when you’re cooking in the future. I actually don’t do that because I forget about it every time. I always cook other components of the same meal in the bacon grease though, like this.

Instructions

  1. It’s so good that you are talking about this, I had forgotten how we use to eat these after Thanksgiving with turkey salad. My Dad would put anything on a sandwich and he put ham on his, but Mom said bacon would be better. He couldn’t wait for that but we loved it. I didn’t think about chicken salad. It’s good to remember foods you had when you were younger. Your recipe looks good, I have to make some with chicken salad now. I can’t wait for my husband to taste it. Thanks SO much for sharing.
