For a long time, I avoided cooking spaghetti squash. It’s delicious, but it’s also a pain in the neck. The skin of spaghetti squash is so solid, you basically need a chainsaw to cut through it. But, I heard of a trick, and decided to use it while I made Sausage Stuffed Spaghetti Squash.
The trick to cutting spaghetti squash is so simple. You microwave it.
Let me be honest with you. I didn’t think it would work. You can microwave boulders and then magically cut through them. But the rumor was you could microwave a spaghetti squash and instead a machete, a simple knife would cut through it.
Well, wouldn’t you know. That works.
Cut a small dashed line across the length of the spaghetti squash. Put the spaghetti squash on a paper plate.
Microwave it for three minutes on high, flip it, microwave it for another three minutes on high.
And honestly, just call yourself a magician or the World’s Strongest Human because you can now simply cut down that dashed line and the spaghetti squash will open.

Sausage Stuffed Spaghetti Squash Recipe

Sausage Stuffed Spaghetti Squash Ingredients:
- 1 spaghetti squash
- 2 tablespoons olive oil
- 1 large onion
- 4 cloves garlic
- 16 oz. ground Italian sausage
- 1 can diced tomatoes
- 4oz. shredded mozzarella cheese
How To Make Sausage Stuffed Spaghetti Squash:
Pre-heat the oven to 400 F.
Cut the spaghetti squash according to the directions above.
Clean out all the seeds from the inside of the spaghetti squash.
Sprinkle the inside of the spaghetti squash with olive oil and salt. Place the spaghetti squash, with the inside facing down, on a foil-lined cookie sheet. Bake for 55 minutes.
While that’s cooking, dice the onion and garlic. Cook them over medium-high heat for about 10 minutes until the onion starts to get translucent.
Add the ground sausage and brown the sausage.
Add the can of diced tomatoes, including the liquid inside, plus any spices you might want, until it starts to bubble. Set aside.
When the spaghetti squash is done, use a fork to “tear up” the inside of the spaghetti squash so it looks like pasta.
Fill with the sausage mixture.
Top with the shredded mozzarella.
Bake an additional five minutes until the cheese is melted.
Serve warm.
