Growing up, my mom would make a ton of Christmas cookies. The list of recipients grew just as fast as the types of cookies that were included. A regular tray would always have pecan sandies, lace cookies, and Rocky Road fudge.
She would make the fudge earlier than the cookies and keep it in the fridge until she put the cookie platters together. I would every so often sneak a piece of the fudge because it’s amazing.
You don’t have to sneak it. You can just make your own with four ingredients.
Rocky Road Fudge
What You’ll Need:
- 1 can of sweetened condensed milk
- 3 cups chocolate chips
- 1 cup marshmallows
- 1 cup peanuts
What You’ll Do:
Melt the chocolate chips in the microwave. Stir in the sweetened contended milk until combined.
Slowly fold in the peanuts and marshmallows.
Pour the mixture into a foil-lined 8×8 pan and put in the fridge until it is completely cooled (at least two hours).
Take out the pan and cut into squares.
