I’m such a big fan of Mexican street corn. I will order it every single time it’s on a menu.

So, when I’m at home, I’m often experimenting with making other recipes street corn flavored.

Traditional street corn is usually served as corn on the cob or in a cup, as grilled esquites. This recipe is for the latter, except in more of a family-style serving than an individual serving.

It’s a really flavorful side dish to serve in the summer.

You can serve it any time, but I say summer because the recipe really benefits from the char of grilled corn and most people don’t want to grill in the winter when it’s cold outside.

If I’m being honest, pasta salad is usually pretty bland. People try to jazz it up by adding slices of meat and chunks of cheese, but, if you want a really flavorful vegetarian pasta salad, this Mexican Street Corn Pasta Salad is it.

One of our new favorite ways to enjoy street corn flavors is with this Mexican Street Corn Potato Salad. I made it for a party recently and everyone was asking for the recipe.

Grilled corn is added to boiled potatoes and coated with a dressing made from a base of mayonnaise and sour cream that’s seasoned with street corn flavors.

Personally, I skip the queso fresco in this because I do think it’s salty and creamy enough without it, but you can add it if you want.

I love using leftover chicken to make chicken salad. And one of our favorite versions is this Mexican Street Corn Chicken Salad.

It has all the flavors of street corn — corn, mayonnaise, Tajin seasoning, cilantro, etc. — but with the addition of chopped chicken. You can serve it as a sandwich, on top of greens, or just eat it with crackers.
