By now, you know I have a sweet tooth. I’m constantly making and eating treats. Most of the treats I make, though, are on a whim. It’s like we’re invited to dinner at a friends’ last minute and I have a solid 90 minutes to whip up something to bring with us.
These layered chocolate mint bars are one of those treats.
You can make them in a handful of minutes and have them ready to go. They’re amazing, by the way. As I was cutting this batch, Pete was sneaking pieces over my shoulder, reminding me just how much he loves the chocolate and mint combo.
So of course, if you’re making these, you might want to make a double batch so you can keep some in your fridge for yourself.
Layered Chocolate Mint Bars Recipe

Layered Chocolate Mint Bars Ingredients:
- 1 cup dark chocolate chips
- 1 cup mint chocolate chips
How To Make Layered Chocolate Mint Bars:
Melt 1/2 cup of the dark chocolate chips. Spread them into an 8×8 square on a sheet of parchment paper.
Put the parchment paper, flat, into your fridge to cool. Take it out after 20 minutes.
Reserve a few (about 15) of the mint chocolate chips. Melt the rest and spread them on top of the dark chocolate, completely covering it. Put it in the fridge to cool, at least 20 minutes.
Chop the remaining mint chocolate chips into very small bits. Save the mint chocolate dust.
Melt the remaining dark chocolate chips. Spread them, quickly, on top of the mint chocolate layer. Quickly pour the chopped mint chips and mint dust on top of the dark chocolate.
Put back in the fridge until it is solid, about 20 minutes. Chop it into rectangular bars.
Keep them in the fridge until you’re ready to serve them.

Notes
Pushing the mint chocolate dust down with a toothpick helps to assure it won't fall off when you're cutting the bark into pieces.
