Our friends are growing tomatoes a lot faster than they can eat them, which works out for us because they brought us over a huge bag of them recently. Now, sure, you could just cut them up for a salad (which is actually what I’m doing tonight with the ones we grew), but I wanted to do something a little more exciting with our friends’. So, when we had a BBQ at my parents’ house last week, I made grilled tomatoes. They were really easy to make and are something you can prep at home then bring to a friends’ house for a BBQ.

Corn and jalapeños aren’t the only vegetables you can grill. For more ideas, check out all of our Vegetarian Grilling Recipes.
