Grilled Chicken Salad Recipe

Looking for a delicious Weight Watchers dinner? Make this Grilled Chicken Salad from www.drugstoredivas.net. It's ZERO Weight Watchers Freestyle Points.

I don’t count calories. I really believe that you have to have a good relationship with food, and using an app to log every bit of food you want to eat doesn’t work for me. Instead, I just try to cook as healthy as possible. I wish I could eat fried chicken every day, but that’s unrealistic. Delicious, but unrealistic. So for dinner, I make things like this Grilled Chicken Salad recipe.

Turns out, this is actually a Zero Point Weight Watchers dinner recipe. That’s amazing and was completely unintentional. There’s more about this salad being zero Weight Watchers points at the end of the post, so be sure to check those tips out there.

Our regular dinner just happened to align with Weight Watchers. That made me feel really good and felt like my dinner ideas really are filled with really good choices.

And then it made me want to share it with you.

Grilled Chicken Salad Recipe Frequently Asked Questions

How is this Weight Watchers Grilled Chicken Salad zero points?

We’ve made a couple adjustments to a traditional grilled chicken salad to make sure it fit into Weight Watchers. The points are based on the Freestyle Points program. Weight Watchers has changed, recently, so be sure to check with your current plan to make sure that this salad is still zero points before adding it to your day.

Since skinless chicken breast is a zero point food with the Weight Watchers Freestyle Points program, you’ll probably be eating a lot of chicken if you’re on that program.
So that’s why the protein in this salad is chicken. If you want, you could use a grilled fish on top, since that’s also zero points. Or go with shrimp, which are also zero points.

We squeeze a lime on top of this salad, which acts as a dressing for the salad. If you used a bottled dressing, that would add a lot of calories and Weight Watchers points to your meal. Personally, I’ve started buying mixed greens with arugula because arugula is really flavorful. And since I like the taste of it a lot, I don’t even use dressing. That would mask the flavor of arugula. But, for sake of this recipe, I figured you might be missing a dressing. Hence the lime.

Now, you can add cheese too, because cheese is delicious on anything, but the majority of cheese has a lot of points. I’ve been told Kraft Fat Free Cheddar is zero SmartPoints, but I’m not sure with the new programs. So be sure to check before adding them.

And there has been a bit of “controversy” over the olives. When I originally wrote this post, 1 ounce of olives (which is about 6 olives) is 1 point. I never put that many olives on my salad. It’s usually two olives, sliced thinly, and spread on top. I really just add them for a bit of the briny flavor. Two olives is about 1/3 of a point. With Weight Watchers, you can’t count fractions of a point. And since this would round down to zero anyway, it counts as zero. If that 1/3 of a point is gonna drive you mad, then just go ahead and leave off the olives.

What’s the easiest way to grill chicken?

This is the easiest way I’ve found to make grilled chicken is using the Foreman Grill. You don’t have to worry about heating up an entire grill when you’re using the Foreman Grill, and you’ll still get the grill marks that you’d get with a regular grill.

What’s also really great about the Foreman Grill is that the panels are non-stick, so you don’t need to worry about spraying a coating or covering the chicken in oil to make sure it doesn’t stick to the grill. And, if you are thinking about Weight Watchers points as you make this, you don’t want to use oil.

Plus, cleanup with a Foreman Grill is so easy — as long as you remember to put a drip tray in front of the grill to catch anything that might drip off during cooking.

You can grill chicken on a charcoal grill, which is the type of grill we bought when we moved into our house. For me, a charcoal grill is a bit of a pain. Heating the charcoal is a process, and cooling down the charcoal is another process.

You can use a propane grill too, which is a lot easier than a charcoal grill because you just turn the dial and it’s on, basically. But it’s still not as convenient as the Foreman Grill.
With that, I can have grilled chicken in just a handful of minutes. And it cooks both sides at the same time, too, so I don’t have to think about flipping chicken.

What is a Zero Point salad dressing?

We use half a lime as salad dressing on this Grilled Chicken Salad because it’s zero points. But, if you’re looking for more of a thick dressing, the ones below are Zero Point salad dressings:
