Panera Bread makes a delicious, but very expensive, green goddess avocado toast. So, I made a much cheaper dupe recipe. And now you can make it at home too.

Last year, Panera Bread missed me and gave me a $5 coupon. I was excited thinking about all the food I could get for five dollars.
It’s not that much.
One slice of green goddess avocado toast was $4.99 (guys — it’s $5.19 now).
So, that’s what I ordered. It was delicious. I posted it on Instagram at the time and was like, “If this is why millennials can’t afford a mortgage, I get it.”
A couple months later, Pete and I were flying back from Nashville and stepped into a restaurant while we were waiting for our flight. Pete saw avocado toast on the menu and got excited.
But it was $16 for one slice. Also, it was only served breakfast and we were there at dinnertime.
So I told him once we got home, I would buy all the ingredients to make a fancy avocado toast.
For that same $16, I had enough ingredients to make eight slices of avocado toast. If I bought two bags of avocados and spent an extra $4, I would have been able to double that.
So the lesson here is: Avocado toast is amazing. But make it at home using this recipe.

Green Goddess Avocado Toast Recipe

Green Goddess Avocado Toast Ingredients:
You can get the full list of ingredients with measurements in the recipe card below.
- Sliced artisan bread – You want a harder bread that will hold up to all the toppings, plus it feels more fancy on this bread rather than plain white bread.
- Avocados – Ripe avocados are necessary for the avocado mash. We use Hass avocados, but you can use whatever you prefer.
- Lemon – Lemon juice adds a brightness to the flavor of the avocado mash, but also preserves the green color and prevents the avocado from oxidizing. We use a fresh lemon, but you could substitute bottled lemon juice.
- Seasoning – Salt enhances the flavor of all the ingredients and garlic powder adds flavor to the avocado mash.
- Cherry tomatoes – These can easily be cut into small slices to lay across the avocado toast. If you can’t find cherry tomatoes, grape tomatoes will work.
- Arugula – The spice of bitter arugula balances the sweetness of the tomatoes.
- Feta cheese – A crumble of feta cheese adds a little bit of salt and an extra creaminess to the toast.
- Green goddess dressing – Without green goddess dressing, you can’t call this green goddess toast. But, you can substitute any herb-forward dressing if you can’t find green goddess.
How To Make Green Goddess Avocado Toast:

Start by toasting your bread.
We just put it in the toaster while we’re making the rest of the ingredients.

Now to make your avocado mash.
Scoop the inside of the avocado into a medium size bowl.
Squeeze in the juice from one lemon.
I say this every time I talk about adding citrus into a recipe, but here’s Pete’s hack. Take the lemon and microwave it for 15 seconds. Then, aggressively roll it on the countertop. This will break up the pulp inside and will result in more lemon juice than if you try to squeeze a cold lemon.
Add in the seasoning.
Mash until combined.
It’s much easier to mash using a potato masher if you have one. When I’m making guacamole, I usually mash with a fork because I want it to be chunkier, but when I’m making avocado mash for avocado toast, you want it smooth. And the best way to get that way is with a masher.

Spread the mashed avocado on top of the toast.

Cut the cherry tomatoes into four or five slices each.
Put the tomato on top of the mashed avocado.
I am very meticulous with how I place the tomato slices on top of the avocado to ensure that each bite has some tomato in it. You don’t have to do this.

And a small handful of arugula on top of each slice.
You want to spread the arugula across the entirety of the bread. Just like the tomatoes, you want to assure that there is arugula in every bite.

Sprinkle the feta cheese on top.
If you don’t have feta cheese, cotija cheese or queso fresco works. You don’t want to skip the cheese because you want the creamy texture to mix with the other ingredients.

Drizzle some green goddess dressing on top.
Continue until you’re done with all of the ingredients.

Green Goddess Avocado Toast: Frequently Asked Questions
We don’t recommend making this ahead of time because the toppings will cause the bread to get soggy. Also, avocado tends to oxidize, so if you make this ahead of time, you run the risk of serving brown avocado, which doesn’t look pretty.
This is pretty similar to the standard Green Goddess Avo at Panera Bread.
If you order this at Panera Bread, you can swap a couple ingredients because it’s made to order (like adding roasted red peppers and fresh herbs).
Also, Panera Bread has a different avocado toast with none of the toppings. So if you’re heading to Panera to order this, just make sure you’re ordering the Green Goddess Avo if you want this.
Green goddess dressing is a tangy, herb-forward salad dressing.
If you can’t find any, any light vinaigrette with herbs works. An Italian dressing would be a good substitute, or a homemade vinaigrette, like the one we make for Maroulosalata (with olive oil, lemon juice, salt, and oregano), would be perfect.

- 4 avocados
- 1 lemon
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 10 oz. container cherry tomatoes
- 4 oz. fresh arugula
- 2 oz. feta cheese
- Green goddess dressing (to taste)
Instructions
- Start by toasting your bread.
- Scoop the inside of the avocado into a medium size bowl.
- Squeeze in the juice from one lemon.
- Add in the seasoning.
- Mash until combined.
- Spread the mashed avocado on top of the toast.
- Cut the cherry tomatoes into four or five slices each. Put the tomato on top of the mashed avocado.
- And a small handful of arugula on top of each slice.
- Sprinkle the feta cheese on top.
- Drizzle some green goddess dressing on top.
