Pete went to New York for the World’s Science Festival a few weeks ago, and my parents were away in Atlanta at the same time, so I was left to my own devices. And that meant I could cook whatever I want. I cook dinner every night on a regular basis, and I always try to make it as healthy as possible. But when everyone was away, and it was just me, I made Corn Dog Muffins.
Now, funny story. When I first lived by myself, I had no idea how to cook. My mom didn’t send me off with a book filled with recipes, so I really was in trouble. I remember getting so excited one day when I was mashed potatoes. I mean, I even took a photo of them because I was so proud of myself.
Months later, I found that photo … and realized my “mashed potatoes” was just a baked potato’s insides taken out and mashed. I remember adding butter and milk, and it was just a mess. But, I was so proud.
I was also proud when I invented corn dog bread — basically corn bread with chopped up hot dogs. You cut it into slices, just like banana bread, and eat it. That’s still something so delicious to me, but something I only ever made for Pete once because, well, corn dog bread isn’t something you can eat on a regular basis.
You can, however, eat Corn Dog Muffins at every backyard BBQ this summer. They’re delicious and something a little different than a regular hot dog.

Corn Dog Muffins Recipe

Corn Dog Muffins Ingredients:
- 1 box corn muffin mix
- 1 egg
- 1/3 cup milk
- 3 hot dogs
How To Make Corn Dog Muffins:
Pre-heat your oven to 350 F.
Make your corn muffin mixture according to the package. You can make this from scratch (and I do that sometimes), but it’s just easier to open a box.
Generously grease your mini muffin pan. Corn muffins absorb a lot of butter, so if you don’t grease with a lot, your muffins will get stuck in the pan.
Fill each muffin cavity about halfway to 2/3 of the way full with the corn muffin mixture.
Cut each hot dog into about seven pieces.
Stick one hot dog piece in the middle of each muffin cavity. Try not to stick it all the way to the bottom.
Bake your muffins for about 15 minutes, or until the corn muffin becomes golden brown.
Serve warm (if you can).
