Years ago, oh my gosh, like two decades ago at this point, my mom got a dessert recipe from her coworker, Mary. She told me I needed to try Mary’s cracker bark because it was delicious.

The base was saltine crackers, and, I’ll be honest, I wasn’t sure about that.

I mean, I usually reserve my saltines for soup, so I wasn’t sure about having them in a dessert.

Boy was wrong. This cracker bark of hers was amazing. You don’t even realize you’re eating saltines until someone tells you. You just think it’s a crunchy base, covered in toffee and sugar.

This recipe goes around the Internet every so often, so you may have seen it. And if you have and you want to try it, you’ve come to the right place.

Without further ado we give you our chocolate saltine cracker toffee bark recipe.

Or you can call it Mary’s Cracker Bark recipe like my mom still does, even though you have no idea who Mary is (and I’m not quite sure that I know who she is either).

How To Make Chocolate Saltine Cracker Toffee Bark:

Pre-heat the oven to 400 F.

Start by laying the saltine crackers in a single layer on a rimmed baking sheet.

Since the saltines are square, they line up very easily next to each other on the baking pan.

Quick note: If you have a silicone baking mat, you can put that down to line the baking pan. That will make clean up really easy.

If you don’t, you can lay down some parchment paper or leave the pan uncovered. My mom does the latter and it works fine.

Melt the butter in a saucepan on the stovetop.

Pour in the sugar.

Stir until the sugar and butter are completely combined. This should take about five minutes.

You want to form a sticky, toffee-like caramel mixture. It should feel tacky, but shouldn’t completely stick to a bamboo spoon.

Slowly, pour the toffee mixture on top of all of the saltine crackers.

You want to make sure that each cracker is fully coated in the toffee mixture. That will give the crackers that sweetness you’re looking for.

If the crackers aren’t coated, they’ll taste like saltines with melted chocolate on top. Which is not very good.

Bake the tray for about five minutes until the toffee starts to set.

Sprinkle the chocolate chips on top of the crackers.

You’re going to spread these in the next step, but you’ll make your life a lot easier if you evenly distribute them now.

Bake again, this time for about two to three minutes, just until the chocolate chips are warm.

You want to be really careful and watch your chocolate so it doesn’t burn. That’s the only reason I really don’t love using chocolate chips in recipes.

If they burn, there’s no coming back.

Use an icing knife to spread the melted chocolate chips into an even layer across the top of the crackers.

If you don’t have an icing knife, you can use the back of a spoon.

Immediately sprinkle your chocolate bark with your toppings.

Chopped nuts stand out the most against the brown of the melted chocolate. Sea salt tastes delicious because salt enhances the flavor of chocolate. So your cracker bark tastes good, but the salt melts into the chocolate and you don’t see it as well.

If you’re making this for a holiday, you can sprinkle it with holiday themed sprinkles or sanding sugar in that holidays colors.

Let the cracker bark cool completely (or, at the very least, to room temperature).

You want to let it cool on the counter.

If you put it in the fridge immediately, there’s a chance the chocolate will cool at different rates and this will cause your chocolate to discolor.

It’ll taste fine, but if you’re making this for a gift or serving it to friends, it just won’t look as pretty as you want it to.

When the cracker bark has cooled completely, use a sharp knife to cut it to pieces.

What do you do if the cracker bark gets stuck to the pan?

If you’re trying to remove the cracker bark from the sheet pan before it has completely cooled, it’ll stick.

If you wait until it’s cooled, it’ll pop off.

But, if you don’t have time to wait, after the chocolate is cooled but maybe crackers aren’t completely cooled, stick the entire tray into the freezer. That’ll help it to cool completely, which will assure that it pops off the tray.

Can you make this ahead of time?

You can make this ahead of time. It’s actually better if you do because that means you’ll be able to cool it completely and cut it into squares.

How can you store leftovers?

Store any leftover toffee bark in an airtight container. You can keep it on the counter for up to two weeks.

If you need it to last longer, you could freeze it for up to three months. Just let it completely defrost in the fridge before serving.
