Eventually, BBQ season will come back around. It doesn’t feel like it right now, but soon, you’ll be thinking of side dishes for potlucks. And I’m telling you, this Bacon and Bleu Coleslaw will be the biggest request.

There are two ways to make this.

The first is the easy way, which is how we’re doing it. Go to the store and buy a bag of coleslaw mix.

The second way is a little more involved. Buy a cabbage and chop it.

Now, I’ll be honest with you. I generally make everything from scratch and when I make coleslaw, I do usually chop us the cabbage and carrots by hand. But, most people aren’t like me. Most people want something quick and easy that looks like it took a while.

This recipe is for those people.

It’s also because we had a party where two people brought bags of coleslaw, and one got left behind. So I used that leftover bag to make this Bacon And Bleu Coleslaw to go with the party leftovers.

And it’s sort of a riff on my favorite burger recipe we’ve made for Drugstore Divas: this Bacon & Bleu Stuffed Burger.

What You’ll Need:

  • 1 bag coleslaw
  • 8oz. bleu cheese crumbles
  • 6 slices bacon
  • 1/2 cup of mayonnaise

Make your bacon. When the bacon cools,  chop it into crumbles and set it aside.

Put the bagged coleslaw in a bowl and mix it with the mayonnaise.

Add in the bleu cheese crumbles and mix.

Finally, add the chopped bacon and stir everything together.

This would also be amazing to serve on top of pulled pork. We usually do top our pulled pork with coleslaw (something we learned when we moved to North Carolina), so this would give it a bit of a kick.

Ingredients

  • 1 bag coleslaw
